It was super difficult to book in the early days, but now it's manageable with a bit of notice. A few otsumami dishes were served, which were all not bad, but I was mostly looking forward to the nigiri and to see how much of Sugita's style imparted to Yamato-san. The nigiri size felt similar, but the flavour of the shari was on the lighter side. I didn't get a chance to ask him about the vinegar he uses, but I just wished there was just a touch more impact. Neta was great though.. more focus on white and silver fish, which was good for May. My neighbouring diners were happy to drink also as half the counter was solo-dining which made for a bit more energy in the room.

When it comes to ふぐ, there are very few 専門店 that plays at the level of this shop. Photos generally don't do fugu justice but aside from the perfect texture and crunch, the ankimo sauce with negi and spicy radish topping is something I could live with eternal top-ups, was the perfect complement side dish. Fried fugu was great, although I like any fried food in general basically... the 雑炊 carried the fugu 'dashi' through and got better as we went on.. I added the ankimo almost as a topping, which was the satisfying finished that I needed from a shime.

This was from a visit some time back. Defining shinyness to the ultimate level, this meal showcased Ogino-san's perfection in each dish. Flavour, balance, and textures come together for what has been one of the highlight meals of 2023 for me. The vibe with him and his staff is also hard for other places to match, resulting in an almost complete experience that extends beyond just the food. I am also a sucker for delicious, shiny, orange egg yolks. shiny boom!

If you like your chicken as much as I do, there are only 3 shops in Japan that I have been to, which can satisfy the cravings (yakitori places aside). This place, located not far from the shores of Biwako is also not for the faint of heart, essentially defining the term "head-to-tail". Two chickens, one male and one female for contrast and the result is some juicy, tasty chicken parts that really requires you to have a sense of some of these parts and which part of the chicken it comes from.. there is a noticeable difference between the 2 chickens and I wasn't entirely sure which one I preferred. Either way, unique and fun experience eating here.

As the end of the year nears, it's time to reflect upon some of the highlight ramen meals this year. Despite a 40-minute Shinkansen ride plus a 20 minute rent-a-car drive and not to mention the difficulty in getting a slot here in the first place, our ramen team finally made it. Overlooking the hype and ranking of this shop, it is indeed definitively one of the best I have eaten. The velvety dark blend of 4 soy sauces, including one which has a bit of age on it is the basis for the complex, unami bomb to which this soup is. Add in an array of the ultimate selection of chicken from Nagoya and Kagoshima and the finest pigs that would make any tonkatsu lover get excited and you get one of the most impressive soups of the 100+ ramen bowls i have had this year. The noodles, water and even salt use the finest ingredients also and there is literally nothing left to change. Is this definitely the best? At this top echelon of ramen shops, there are 3 or 4 places that are very very close.... its hard to pick just one! Max boom!

With such a diverse array of sushi chefs, ranging from those who focus purely on seeking the most prized cuts of every ingredient imaginable, to those who focus on finding the ultimate vinegar combinations to match, but there are only a few sushi chefs who one can look at as an artist of sorts. Sugita is one of those that have found the balance between culinary artistry, ingredient selection and execution. There is an almost surreal series of movements that he follows with the preparation of each piece of nigiri with Sugita-san in seemingly meditative state in order to feel the metaphysical connection with each neta.
The blended shari that errs on the more powerful, grippy side of the spectrum was initially more intense than my own preferences but ultimately serves as a sound balance to the range of fish he utilises.
As the meal progressed, I could begin to understand that perfected singularity he is striving for.. there is a state where flavours, visuals, emotions and appreciation for artistry reaches equilibrium.. not sure if it is possible to reach there, but this search for the holy grail is something that has to be appreciated.
Just make sure you show up hungry as it gets pretty filling!
