How good can unagi get? I haven't quite tried all the unagi places out there but I'm pretty sure this place serves pretty much just that. Grilled to perfection with a nice amount of fattiness, incredible flavour and beautiful texture. The sauce is applied several times during the grilling process and is not too sweet.. just right for me. Let's not forget those yummy eels guts or the absolutely perfect building which houses this restaurant. Surreal.

This is almost identical in the way sushi neta and shari can be broken down and analysed.
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
This shop focuses more on raw parts (just as some top shops offer a few Sashimi dishes), especially at the beginning. The otsumami is good balance between some vegetables, eggy pieces and even some chicken cooked in other ways, again just as many great sushiya does. Finally, the skewers (nigiri) showcase the balance of heat, seasoning, and quality of the chicken as they are grilled to close to perfection at this place.

The result is one of my favourite yakitori shops in Japan where everything just seems to come together. In many ways, very similar to how I break down every sushi meal I have.

Clean dishes but with punchy flavours. Really nice atmosphere in a beautiful venue and to top it off, outstanding service (the manager drove us to the station after dinner since the trains had some major problems that day).

2 of the more interesting wines from dinner. 1991 Calera Jensen marks the oldest Calera I have tasted. Cherry, red plum and tobacco on the nose with a floral potpourri essence that lingers in the glass... promising. The palate was a little less expressive, thin and with somewhat overwhelming acidity (whole clusters meant low acidity and then acidification) but it somehow worked with the beef tartare and shabu shabu. Youngish vines at the time (16yrs old), with limestone soils with vines that were brought over from Burgundy and with 30% new oak. Overperforming 30 year old US pinot for me though. 2001 Gaja Sperrs is memorable for me as it was pretty much one of the first wines that got me into wine in 2003/04. At the time, Gaja wines were perhaps EUR30 or so? Which was already a fair premium at the time. The wine itself is still youthful.. dark fruit, earthy, smoke, spice and nice layered minerality. The vibrancy of the wine was electrifying and the acidity on this was a much more balanced wine. Both were great with meat.

A cozy auberge-like house with bird nests, insects and the like roaming around which offers what I can only describe as innovative Italian/French. Some dishes were quite extraordinary, like the 'escargot' amuse bouche. Service is great and its definitely worth the trek out.
