Part of the ever-growing "Sho" group, Saito-san worked for Nakazawa-san after coming back from a stint in the US. Two types of shari were used and I particularly liker the well balanced akazu shari, paired well with some of the more powerful fish. This shop focuses more on raw parts (just as some top shops offer a few Sashimi dishes), especially at the beginning. The otsumami is good balance between some vegetables, eggy pieces and even some chicken cooked in other ways, again just as many great sushiya does. Finally, the skewers (nigiri) showcase the balance of heat, seasoning, and quality of the chicken as they are grilled to close to perfection at this place.

The result is one of my favourite yakitori shops in Japan where everything just seems to come together. In many ways, very similar to how I break down every sushi meal I have.

One of the most well known Szechuan places in Tokyo. The restaurant does not have many small tables and as we were in a group of 8, we were able to get one of the cozy rooms. Can't remember exactly which alcoholic person opted for this 2018 Moutai, which was essentially undrinkable... i like certain high proof alcohols but this is one I still don't fully understand.

The food was a bit up and down. The sea cucumber dish was perhaps the most balanced dish but all the sauce tasted the same after a while. The issue with a lot of Chinese restaurants in Tokyo is that the prices are obscene and the quality is usually comparable to a mid-level eatery in HK.

Strangely, even though we ordered the Moutai at the restaurant, the staff refused to pour it for us in case he spilt any of it... 🤔
