The most striking thing is the powerful akazu shari... definitely leaves a mark. Then the sake pairing.... its not really a sake pairing as such but more or less a Masuizumi pairing. Not that I'm complaining 😆. There is a strong motion to support local produce and producers which I can totally respect. It is quite a long hike outside Tokyo though!

The quality of the neta is excellent with a medium vinegared shari that gets a touch stronger as we progress through the meal. The balance of the shari to neta was actually my least favourite point of the meal even as everything was positive. Individually, the components were great, the service was onpoint and the atmosphere is awesome.

The quality of the tempura here is excellent and the atmosphere of the place was great.. that Hiroshi Senju piece on the back wall completed the picture for me. But for me, there was just something a little bit off.. maybe it was the small misunderstanding with the wrong number of seats, which to be honest can happen sometimes. But I felt that because of that there was a general avoidance of our end of the table throughout the whole evening. Or perhaps it was the selective re-booking. Kind of ruined it for me. Shame because the quality of the tempura here is amongst the top 3 places for me in Japan.

The small single vineyard wines from Canonica on the upper slopes with it naturalist methods brings through a restrained power and elegance. Then Accomasso, who comes through as the most balanced of the three makers.. floral and dark cherry essence supported by elegance and structure. Fun wines for a super dinner.

The fresh tuna belly had a tougher texture than normal so some insane knife skills were used to balance the texture.
