Pedro Braga (@pbraga ) abriu em 2017, o primeiro nome inteiramente seu depois de alguns anos a chefiar a cozinha de outros. Formou-se no rigor do Le Cordon Bleu e na cozinha de Pierre Koffmann, em Londres, passou pelo Pedro Lemos, no Porto, e foi um dos primeiros enfants terribles da nova geração portuense ao lado de Vasco Coelho Santos.
Ao longo destes anos o restaurante já teve várias vidas. Nasceu com fama nos almoços de partilha e cedo criou alguns pratos “clássicos”, como a bola de Berlim, o arroz de tamboril ou a rabanada.
Veio a pandemia e o Mito, entre encerrar ou adaptar-se, tornou-se uma hamburgaria. Brioche caseiro, chefs convidados e receitas distintas. Voltou em modo 2.0. Entre idas e voltas, Mirna Gomes (@mirnap_gomes ) ocupou um lugar ao lado de Braga na cozinha, e essa segurança devolveu-lhe as consultorias, os eventos e até o Reitoria outra vez.
Hoje o foco do restaurante está no jantar. Um oásis, digo-o sem pudor, numa zona da cidade onde a ambição gastronómica rareia.
Nesta visita, com prelúdio no Torto (@torto.porto ) - onde, por milagre, apareceram dois croquetes de boi com maionese de chouriço. Já no restaurante, não podia faltar a mítica bola de Berlim com creme de pata negra e bacon: o doce e o salgado a complementarem-se sem discussão. Seguiu-se uma omelete de gamba de execução irrepreensível, e uma versão revisitada do tártaro de novilho com flat bread. Nos principais, uma costeleta de porco maturada, e uma cenoura em texturas que era bem mais do que a habitual cortesia vegetariana do menu.
Para fechar, o Pedro sempre foi famoso pelas suas sobremesas gulosas e esta mousse de chocolate com gelado de café e fava tonka não foi excepção.
Um grande jantar. E uma pergunta no final - porque estive tanto tempo sem voltar a este Mito?

His parents, Heinz and Margarethe, both Styrians, had opened a tavern on a corner of Vienna‘s third district and named it after the place they came from: Steirereck, the Styrian corner. Big plates, small prices, the food of southern Austria served to people who missed it — a concept that held for decades.
The son took the opposite road to his parents. Altötting, the Obauers at Werfen, and then the wandering years in the kitchens that then ran Europe: Chapel at Mionnay, Mosimann in London, Robuchon in Paris. He came back with another idea in his head, the modern dream of French nouvelle cuisine. In 2001, after Pogusch, Heinz and his wife, Birgit, swapped houses with his parents and moved to Vienna; in 2005, they moved in for good into a glass pavilion in the middle of the Stadtpark. The early years were hard, the guides marking them down, the press hesitant before the novelty and the nerve of it. The couple had to rebuild, alone, a reputation his parents had spent three decades raising. “We skipped cheese at lunch — saving it for the evening as part of a lighter dinner. The Japanese “Misho” lemon, turned into a sorbet with Ligurian olive oil and Crème d’Isigny, worked as a perfect palate cleanser: citrusy, clean, light and flavourful.
The warm “Trevoux” pear with Marcona almond, parsley, lime and Muskateller became a dessert that felt like several at once. Balanced sweetness, distinct textures, a play of temperatures — warm pear against cooler elements. No excess, exactly what one expects after a long meal.
And then, as an autumn treat off-menu: a tarte tatin with vanilla ice cream and white truffle filling the room with aroma. We could have ended there, but as if we had barely eaten, a seemingly endless parade of petit fours followed — and not miniature ones. Many spoon desserts: sorbet, chocolate cake, lemon meringue tart, mango and coconut tartlet, beignets, madeleines. Everything at the expected level — no obsession with Instagram pastry aesthetics, but far more flavour and memory than most elegant desserts populating celebrity pastry chefs’ feeds.“ - more on the blog
