Back again. Man, I love Thai food - and this is easily one of the most impressive Thai restaurants I’ve been to. The creativity across the menu and the way flavours are layered and balanced is genuinely next level. Every course feels like it shouldn’t be able to top the last, and somehow, it always does. A well deserved star for the team here .
Their short rib taco is one of my favourite bites of all time, and I’m so glad it’s stayed on the menu. Perfectly tender, ultra-juicy, beautifully charred short rib, served on a sticky rice roti “taco” with kaffir lime relish and fermented sticky rice. A two-bite explosion of flavour - rich, spicy, smoky and fatty, yet perfectly balanced.
The grilled king crab shoulder with green chilli nam jim and coriander stem was another standout. An underutilised ingredient that’s incredibly buttery and sweet, handled with restraint and just the right hit of heat. I loved how gently this was flavoured. The lobster khanom krok is a wild dish that’s hard to describe - think a crisp-cased dumpling filled with warm, fermented rice custard, topped with smoked lobster tail. Completely unique. Beautiful to look at and even better to eat.
So many layers to every dish here, with nothing out of balance. This is the kind of fine dining I love - creative, flavour-led cooking that’s bold, punchy and never predictable. An all-time favourite. Food, service and vibe all in check Less

I first had a version of these at @ambassadorsclubhouse in London and have wanted to make them ever since. A proper butter chicken or murgh makhani is one of the most addictive sauces out there. Rich, spicy, creamy and tomato-forward, with cashews and plenty of warming spices giving it that luscious texture and depth.
In this week’s article, I break down how I build the sauce my way + how to pair it with these super-crispy chicken wings. There are four key stages for wings to get them properly crisp and all of that will be covered in detail. On the side, a cooling yoghurt dip with coriander and ghee-toasted crushed cashews.

Lots of goodness coming out of the kitchen at Lion in the Sun, the all-new spot at Mandarin Oriental Downtown.
Spaghetti all’assassina is a rare sight on any menu, let alone 62 floors up, and it’s one of my all-time favourite pasta dishes - so was pleasantly surprised to see it on the menu here. Beautifully executed, with an ultra-concentrated tomato sauce reduced down with plenty of garlic and chilli, slightly scorched spaghetti, and a chargrilled squid crumble over the top. Deep, complex, spicy and seriously addictive. Loved everything about this dish - the flavours become so intense and moreish when made well.
The vongole was also very good. I’m a harsh critic when it comes to vongole and this one hit the mark - a properly emulsified, clam-forward sauce, with subtle hits of garlic and chilli lingering in the background. The beef ragu was equally impressive - rich, layered and tender as far as ragu goes. Excellent pasta-making across the board - all perfectly al dente, chewy and satisfying to eat.
Also worth calling out was their endive, raisin and caramelised pecan salad. It hit all the right notes - crunchy, sharp, creamy and bitter, with little pops of sweetness throughout. As for the seafood bar and grill, i went for the open-fire grilled carabineros and langoustines - super fresh, delicate and sweet. Some nice plates at the new hand roll bar in Dubai. Was mesmerised by the box of uni I saw in their fridge. Didn’t see it on the menu but ordered a couple hand rolls and they loaded it up with that sweet bafun. Two varieties on the day. Creamy, fresh and delicious. One yellowish orange and one deep orange. Lovely... More

Some nice plates at the new hand roll bar in Dubai. Was mesmerised by the box of uni I saw in their fridge. Didn’t see it on the menu but ordered a couple hand rolls and they loaded it up with that sweet bafun. Two varieties on the day. Creamy, fresh and delicious. One yellowish orange and one deep orange. Lovely hues. This place has lots of small plates on offer too, i liked them a lot. Some fried, some seared, some raw. Im not a maki guy but absolutely loved their yubi maki, probably my favourite of the day. Generously topped with slithers of otoro and seasoned with a sweet soy - buttery and addictive. The seared Wagyu gyoza was clever too. Really tasty and creamy in the centre. In terms of the hand rolls themselves - pretty good. Nice rice to filling ratio and all round well made, although I prefer the finesse of the crisp and combinations of ingredients of the @kokoro.dxb hand rolls. All in all though, solid. The produce is hyper-seasonal, so expect dishes that showcase ingredients at their peak. This surf n turf was a standout - a beautifully pink fillet of beef paired with half a lobster and drenched in beef jus. It’s what every surf and turf wants to be - hearty, in your face and bold in flavour. The carefully de-boned, crispy chicken wing was another one of my favourites as was that spicy sweetbread taco that was crispy on the outside but melted like butter in the mouth. Good to see the return of the mighty hassle-back too - I’ll need to throw up a recipe for these this holiday season, so stay tuned for that. Dessert ended on a high - went for them all but the dirty choc mousse that stole the show. Delicious all round. Great cooking, great vibes 👏🏽 Less

Lunch at Three Bros didn’t disappoint. The menu is a mash up of middle-eastern, Mediterranean and Japanese influences - lots of interesting plates split into 1-bites, cold, hot and pide. It feels fun and casual, but the cooking here is serious. The potato au caviar was the first bite and really set the tone. A perfectly crispy hassleback with smoked creme fraïche and a glistening dome of oscietra caviar. The ultimate bite. The morel chawanmushi was sensational too - the creamiest mushroom custard layered with truffle, hazelnut and chive. Delicious. The adobo chicken wings from @orfalibros_bistro remain one of my favourite bites in Dubai and was v happy to see these being served here! De-boned, stuffed with rice, then glazed and charred till sticky. Incredible depth of flavour in these wings, love them. A must! The otoro with tuna garum and finger lime was another standout. Ultra fatty tuna that was melting onto the plate, shaved paper thin. The bursts of citrus really made this one pop. Plenty of clever flavour pairings across the menu, but what makes this place special is how relaxed it feels. Refined food served in a room with energy and buzz - the balance is spot on. A fun evening at Arts with hand rolls flowing all night long. The guys at Kokoro always bring the top-tier produce - from the cleanest bluefin tuna to the creamiest bafun uni. The attention to detail is what makes it: perfectly seasoned, carefully topped nigiri, crispy nori, and the ideal rice-to-filling ratio in those handrolls. The pop-up ran 17+ courses and was packed with highlights, but my standouts: the uni toast sashimi, madai nigiri, spicy akami hand roll, and the tuna tartlet topped with @n25caviar.
