A very serious player in Chicago, serving up Basque-influenced fare with plenty of choice in chops and seafood. A dimly-lit dining room and roaring grill just off in the corner. Four choices of beef on offer this evening, all strip-loins. A meaty txuleta, dry-aged Holstein, American Wagyu and Simmental. There was Japanese A5 too but not my vibe in a place like this - I think you need to go for something aged or a txuleta. The grill really puts them to work. Hard to choose but go with your gut! I hit the Holstein which was just incredible. Ultra rich in flavour - nutty and intense, with great marbling and a wonderful crust. Sliced through with ease, just needed a good sprinkling of sea salt. The arroz cremoso was delicious too, doused in uni butter and with a mixed medley of crab and other seafood tossed throughout the rice. For fish, hit the besugo orio style with crispy garlic and chilli - excellent. Semi-fatty and tender - really well cooked and tasty. Peppers on the side are a must - these were top. Lots to choose from here so Iād recommend going as a table of 4 so you can try a few plates. Nice spot for dinner #notoriousfoodie š
