This spot in DC was recommended countless times. It’s an interesting concept with a sort of 5-course tasting menu that leaves you to choose the journey from a selection of dishes. Really casual and 1 Michelin star. I’d describe the menu as modern-American with global influence - you can expect plenty of korean and Japanese flavours mixed in with some Italian. The starting dish was their incredible shokupan with house-churned maple butter - fluffy and soft with the most amazing sweet and salty butter. The next dish was interesting - coconut ice cream with caviar. I guess this is a sort of palette cleanser but a really interesting placement right at the beginning - cleaned the plate obviously. I love this combo. It just works so well. For main course, two pastas and huge grilled shortrib. The Korean red sauce dish a sort of short pasta tossed in a creamy, spicy sauce of gochujang and gochugaru - loved the texture of the pasta, like a gummy bear - a sort of in between to pasta and gnocchi. A really rich sauce though, but difficult to eat alot of it! The spaghetti and nori wasn’t my favourite. Just lots of butter and nori - nothing special imo although addictive once I started. Papaya salad was the favourite dish, just an amazing mix of ingredients, flavours, textures - the lot. Super fresh and tasty. The short rib for me wasn’t great - found it quite tough and underwhelming. What saved this main course though, was that fried chicken and cav. The craziest fried chicken - shatteringly crisp and with maple, sesame and crystal hot sauce. Too good. Lots of interesting plates here - go sit at the counter! #notoriousfoodie 🙅🏽♂️
