A counter that’s really like no other. The menu is of course focused on the beef. It’s all about Wagyu here, with 12 courses in total. It’s a super relaxed and informal setting - Hisato and his team are the most incredible hosts and the evening starts with the chefs breaking down a huge joint of A5. You’ll get to try the beef in many forms. Raw, grilled, slow cooked, and torched to name a few - it’s an interactive tasting menu and you’ll be made to feel right at home throughout. Favourites from the evening (there were a few) were the @davidbeckham Sando which is WM’s take on the Shima classic. Ultra thinly sliced roast Wagyu beef layered between two slices of toasted, buttery milk bread. The beef was perfectly cooked. Delicious. The classic Sando was great too, as good as it looks. Also loved the gyoza with the Wagyusco hot sauce - good heat from their hot sauce and the most juicy dumplings. Almost like a xiaolongbao in terms of filling - crazy juicy. Their bafun uni dog was wild too. I just love the uni in Japan and these guys gave us some of the best. All of the courses washed down with many many highballs and plenty of sake.
