This place has been on my list for a long time. With just 6-seats, 1-Michelin star and a tiny menu, it’s 100% worth the wait. Chef and owner Yasushi Matsumura has really created something special here. His 30 years in French cuisine most definitely makes its way into the food. Every element of the ramen from the broth, to the pork, to the noodles is so elegantly put together. I loved it. There are 2 main dishes, the classic ramen and the special. The special just has the addition of a pork, foie gras and truffle dumpling inside - but let me tell you, this is the move. It’s the most juicy, meaty and flavoursome dumpling. A must order - it really took it to another level. The broth here is so complex. Made from duck and chicken bones, with the additional depth from prosciutto, scallops, shiitake, kombu and green onions. It’s clear, light and velvety smooth whilst also having a lovely mouth feel and great body to it. Rich and layered. Liquid gold. The noodles were a little soft for me but this ramen just ticks so many boxes. A perfectly gooey egg yolk and the most amazingly tender chashu pork. You feel good after having this. It’s not heavy at all. On the side, their chashu pork rice bowl. Matsumura-san may tell you to pour a few ladles of the ramen broth on to the rice - it’s delicious, but no match for the ramen itself.
