Another great stay with @waldorfastoria in Beijing. There are two sides to this hotel, the modern building and the Hutong Courtyard, which is connected via an underground passage. Super traditional Ming-Dynasty style decor and incredible features - it feels like you’re in a movie set - a really unique property. Had lunch on the first day at Brasserie 1893 with @chefmandelaz who has just taken over the restaurant. His yellowtail crudo with apple and dill oil was phenomenal. Will post some more bits from dinner at their Michelin-starred Chinese Zijin Mansion too. Incredible Cantonese cuisine with modern flair #notoriousfoodie 🙅🏽‍♂️

An amazing few days at @waldorfastoria in Shanghai. The very first Waldorf Astoria property in China, located right on the Bund. A stunning property, with a luxurious old-style Shanghai design and perfect location. Beautiful rooms, solid breakfast and top service throughout. The Shanghai skyline and neon lit buildings look insane at night from the rooms. The hotel has plenty of choice in terms of dining too. A roast you can always count on. Aberdeen Angus rump and short rib, horseradish crème fraïche, beef fat roast potatoes, Yorkshire pudding, roasted honey vegetables, and the most amazing beef dripping gravy. Everything you need on one table. The confit potatoes here are phenomenal and it’s no surprise as these guys were one of the first to start serving them - super crispy layers of potato with a soft and fluffy centre. Their chicken liver and foie gras parfait with black truffle and toasted brioche was phenomenal. Probably one of the tastiest things you can start a meal with - incredibly smooth and creamy with a subtle sweetness hitting you at the end. For me though the absolute winner was that lemon curd tart. Go here and try it. It’s one of the best lemon tarts in town. That or their brown butter / honey tart.. #notoriousfoodie 🙅🏽‍♂️

Had to check out the Chinese restaurant at Waldorf Astoria whilst in Shanghai. Was lucky enough to get in the kitchen and see how their chefs prepare so many delicious traditional dishes. The barbecued roast meat and duck was phenomenal. Just look at the colour, glisten and char on the char siu - it was unreal - ultra soft and so juicy. The glaze was sweet and subtly spiced but the texture was unlike any I’ve had before. Proper char siu. Second favourite dish was their signature crispy chicken in the 4th photo. Looks like duck, but no, the most insane chicken. Shatteringly crisp skin and the juiciest meat - literally dripping as you lift up each piece. The chicken is brined for a few days before being cooked and the result is just wild - first time trying chicken like this. On the side, their Wagyu beef fried rice was the obvious order - perfectly seasoned and flavoured with enough wok hei to give you that smokey bite in each spoonful. Rich and flavoursome. This place is probably one of the cheapest 2 Michelin-starred restaurants in the world. Went to check it out for lunch and the food was great. Classic Cantonese dishes and a big selection of dim-sum. The crispy baby chicken was ridiculously good. Golden crispy skin and incredibly tender meat. Flavoursome and satisfying. Sweet and sour pork, texturally great but lacked enough sauce and was patchy in places. Char siu was off the charts - definitely my favourite dish of the order. Sweet, sticky and nicely charred with ultra juicy, tender pork. Roast duck was good too, nicely prepared and served with the chefs fried rice and preserved Chinese sausage. Overall a great lunch and tasty food, would go back for sure. When looking at this place with a Michelin lens though, it’s crazy to me how it was awarded 2 stars. It lacked the refinement and polish of your typical 2 or even 1 Michelin-starred restaurant. Food was good, but no idea how they got the stars, I didn’t see anything unique or innovative - but maybe that’s why I’m not a Michelin inspector.. 😆. Another day another charming Parisian bistro. This time, dinner at Jaïs. An amazing place - the food here is knockout. A warm, intimate dining room with clusters of close tables and an open kitchen. The menu features a number of chef Jaïs own twists on the classics. The creamed linguine with oscietra caviar and 18-month cured Tajima Wagyu was incredible. What a plate - the pasta was al dente and neutrally flavoured to let the caviar and Wagyu beef work their magic. A mouthful of pure umami. The scallop and melanosporum black truffle carpaccio was delicious too - doused in olive oil, black pepper and bread crumb. Highly recommend ordering the dry-aged Simmental beef rib too. The steak here is rich and funky - a beautiful crust and soft, tender texture. A menu and atmosphere that’ll keep you coming back #notoriousfoodie 🙅🏽‍♂️

One of the best dishes I’ve eaten this year. What a beautiful plate from Leo’s. For me, this form of risotto is the most delicious and there is just no comparison. Their saffron risotto is essentially pan fried in butter and flipped so that it develops the most incredible golden crust that encases its creamy filling. The dish here was served on a pumpkin and Parmesan fondue which was rich, mature and subtly sweet. The texture of the risotto itself, perfectly al dente and chewy with a voluptuous, velvety smooth texture. The most satisfying crunch on the outside. Those few flakes of sea salt on top was just the right amount to balance everything out. I could have had two more of these. A dish that made a lasting impression! Lovely lunch at Cafe Cecilia! So many delicious plates on the specials board - the flatbread with gubbeen and hot honey was delicious. Rich, gooey and nutty in flavour, fully melted and drizzled with that sweet spice. Speaking of gubbeen, the deep fried gubbeen with hot honey was equally as delicious. Probably my favourite of the two - something about that crispy bite and gooey centre just struck a chord! Wing rib was perfectly cooked with a rich and funky dry aged flavour. This with those confit potatoes was magic. Didn’t love the peppercorn sauce though I found it had a slightly strange after taste. To finish, the deep fried bread and butter pudding with cold custard was the star. Really warm and gooey in the centre and a perfect contrast to cold custard. Light lunch at Beef Bar. Their Kobe beef jamón is nuts - ultra rich and decadent with a beautiful mosaic of marbling. It’s Japanese beef, cured in Spain and aged for 18 months in Leon. A journey that allows the flavours to mature and develop. With such a wide selection of beef on the menu it’s difficult to decide what to go for. I usually go heavier on the starters and follow with lighter mains. The bao buns, baby quesadillas and of course their famous croque Sando is a must. These are three starters they have perfected. The jasmine tea smoked veal in the bao buns is delicious - super soft and moreish. Lunch or dinner here isn’t complete without their fior di latte gelato - a velvety smooth textured gelato that hits much like Gaia’s frozen yogurt. Too good #notoriousfoodie 🙅🏽‍♂️

Some incredible new dishes on the menu at Dorian. The deep fried duck leg dipped in hot sauce was outrageously good, ultra crispy on the outside and super tender in the centre. The flavour of their hot sauce is addictive, a sort of buffalo-esque tang and creaminess with fairly mild heat. Very good. Max sent out a bunch of new rostis. The beef tartare and uni Rosti was ridiculous, as was the caviar and oyster Rosti. Something about all these delicious ingredients sat on a crispy potato Rosti just works so well. The lobster tail French toast was a total hit - grilled and topped with clarified butter, black truffle, sat on relish, lettuce and toasted brioche. What a bite. Pistachio and caviar ice cream was interesting - a wild combination that took everyone by surprise but also kept them coming back for more. It’s dinners like this that keep Dorian in my list of favourites. Bravo chef! Knockouttt #notoriousfoodie 🙅🏽‍♂️
