A beautiful dinner at The Jade Room in Tokyo. A restaurant led by Michelin-starred Tom Aikens that really makes the most of what Japan’s climate has to offer. It’s a menu led by produce and provenance first and foremost, driven by seasonality and diversity. Warm wood, dim lighting and unobstructed views over Tokyo Tower. An unmatched setting. The menu started with a few light bites and tartlets, all of which were meticulously plated and presented - such intricate work that over-delivered in terms of flavour. Really tasty - the sweetcorn and truffle tartlet was delicious. The scorched onion with bread miso, Hokkaido cheese and truffle was a great follow up dish. For me though, the star dish of the night was that Kyoto amadai with pumpkin and sake. The fish was a work of art - ultra crispy, flaky skin that shattered with the fork. The fish itself, fatty, oily and buttery soft - a melt in the mouth texture. First time trying it. Too good. It even surpassed the Hokkaido venison loin for me in terms of score.
