- Neil Walker added a new meal Dinner at Gaggan at Gaggan – Bangkok
If you visit Gaggan then I recommend sitting upstairs at the ‘Lab’ to enjoy a counter experience where the chefs will better explain the dishes. To do this, mention your request in the original booking but call them a couple of days before the booking date to chase this.

Following my visit here last year, they were awarded a well deserved michelin star in the new Bangkok guide. They serve an inventive tasting menu to just a few covers with a beer pairing available.

This is my first meal at Faviken back in 2016. Since then i have been going back and back and encouraging others to do the same. It is truly a unique and wonderful adventure of a meal.

Another restaurant that I will revisit soon is The Alchemist in Copenhagen. I have been a few times now and it is really interesting to see this incredible talent evolving over time. Especially someone like Rasmus Munk whose food is so inventive and emotive. The meal I have posted here I had two years ago and going back fairly recently one can still see a lot of the same dishes but in their more focused, refined and clearer form. A lot of the dishes are intended to provoke thought and tell a story and send a message to the diner. The Alchemist will reopen soon in a new premises and like new Frantzen, I have very high hopes indeed. Less

Dinner the other week at ⭐️ @restaurant_alliance in Paris. This was one of those meals where I know it was good, great even, but it was too understated for my taste. Maybe to do with the chef, @omiyatoshitaka, hailing from Japan. I say that because I have had similar meals from Japanese chefs. This is in no way intended to be a negative review by the way. The meals that I speak of shared the same characteristics in that they were so nuanced in their flavour profiles, so pure in their clarity. The ingredients were laid bare and naked on the plate with little to distract from the core ingredient. BUT, the flavours and textures were there in the background, propping up the main ingredient, prodding and coaxing it forward onto the centre stage where it belongs and where it can shine.
I don’t know if this is a Japanese thing, I suspect it is, that they focus so much on perfection and refinement (in everything they do, not just cooking) that a dish can get stripped back so much that the flavours become beyond subtle. Perhaps I’m over thinking it 🤷🏼♂️. Anyway, I was left waiting for a dish that would smack me about the chops a little bit but I was found wanting.
There is a strong tradition of Japanese chefs cooking exceptional French cuisine in Paris and this is a good example.

I wonder did they think that just two years later they would be open in an incredibly spacious and luxurious new property and by one of only a very few resataurants in the world to be awarded a 3* michelin straight away. You can see there are a couple of dishes that still remain years later on the new Frantzen menu. French toast and a dessert looks familiar in preparation. Less

My first meal at Gaggan. Before the emoji menu and even a little before it went on the Worlds 50 Best list later that year as highest new entry.
