Deluxe tasting menus are proliferating, along with opulent wine pairings.
Caviar has become as common as crabmeat at a French Creole restaurant.
Waiters are ironing linens on the table just before the next party is seated, and at the end of the meal, you might get a clutch of cookies or macarons to take home with a printed copy of the menu,... More

Caviar has become as common as crabmeat at a French Creole restaurant.
Waiters are ironing linens on the table just before the next party is seated, and at the end of the meal, you might get a clutch of cookies or macarons to take home with a printed copy of the menu, maybe signed by the chefs.
If you missed the news last spring that the Michelin Guide has finally begun assessing New Orleans restaurants, there are signs around town that will clue you in just the same.
Restaurants with Michelin ambition are upping their game and polishing more than just the silver.
Already-fancy restaurants are boosting the luxury level, often adopting plays from restaurants that have received star ratings in other cities.
In this, there’s the risk of a certain sameness taking hold in a city always known for its own cuisine, and something like an arms race of expensive amenities pushing prices higher.
But the upside is seeing excellent restaurants hitting a higher gear while also taking their Creole source material along for the ride.
That’s what can keep worldly dining experiences rooted with a distinctive Louisiana sense of place.
Link in my bio has the full story for readers, and here is a few glimpses of another example, the new chef’s tasting menu they’ve created at @restaurantrevolution_nola , from the gold gilded oyster shells carrying canapés to the chest of mignardises at the end.

Now arriving, a welcome back Sazerac….
Upon reentry to New Orleans after a wonderful, food filled vacation, it was time to reunite with Louisiana food, and this distinct expression of it at @gabriellenola

BBQ shrimp pie (trust me , the pie crust is under there, the peppery sauce sings with a dark heat approaching Szechuan tingle)
Smoky gumbo about as dark as cast iron
The chef’s classic duck with “quacklin’” , part of the repertoire since the Esplanade Avenue epoch
Blackened redfish, the dish that was once synonymous with Louisiana flavor but now is found credibly like this at only a handful of places.
Peppermint Patti to end
It’s great to travel, and it’s great to come back home.

Up another sky jump of a hill, the window seafood display sets the lure at @ostrasecoisas , aprime find for “oysters and things.”
Among the things: more percebes, those squirty little barnacles; grilled razor clams; scallops broiled with all the good stuff (add ikura); and the oysters themselves, deep of cup and strong with briny flavor.

When you wanna bifana, you need a bifana, and around Lisbon they entice you for another of these glorious, juicy, simple pork sandwiches on crusty rolls, cooked up by the window in big pans like carnitas.
This one at Casa das Bifanas was served up lickety-split at a standup counter with a draft Super Bock for a late night snack.

Percebes, aka dragon feet, aka goose barnacles, celebrated in mural and at table, bursting with juice and just such tactile fun to dispatch.
Big fat salty grilled shrimp
Inexpensive wine
All the recommendations for this place were right on, a highlight of the trip encased in a shell and sluiced with butter.

Exhibit A: this classic bar burger, not a slim smashburger, not a giant either, served with cheese that’s melted (not a given with bar burgers).
You can taste the grill on the patty and on the bun, which is from @leidenheimerbakingco and much better than the picnic standard.

It’s centered on two things: boiled seafood and bourbon.
Around them is a mix of New Orleans standards, and variations from the script to frame up a modern take on the neighborhood restaurant.
