There’s always something new at @evviva.nola , where co-chefs are forever trying out new dishes and micro-batch seasonal finds from the market (and I’m here for the mackerel crudo with martinis).

But then the shrimp are in perpetual rotation, and they are always done exactly as I want them to be.
They’re grilled not a moment too long, with a taste of char just on the edge of the shell while the tails keep a fresh pop. Add garlic and lemon, simple, perfect.

Holy Spanish mackerel crudo!
This wonder from the Gulf, so little seen at restaurants, is lushly flavorful, velvety in texture.
It was a happy hour special at @evviva.nola , and we lucked into a plate of it with dinner.
Pair that with perfectly cooked grilled shrimp, just charred at the edges of the shell, and anchovy toasts with both the sour marinated and salty anchovy varieties.
Affordable Italian wine (I love the falanghina).
And for dessert? Plastic cups of Malort... More

It’s the one with the menu that reads simply, overdelivers in fresh and vivid flavors, and changes constantly with the market and the catch of the day. You swore that after that your trip you’d keep eating like this back home, and now you can again at Evviva.
It reunited a circle of people who opened the restaurant this year (in the former Franklin), including two chefs who have fed us so well through the years, Rebecca Wilcomb - once of Herbsaint and Gianna - and Marcus Jacobs - of the late Marjie’s Grill and Seafood Sally’s.
Start with happy hour, which goes late and always has something new and interesting coming through, like a workshop for the two chefs behind this kitchen.

I’m very familiar with this view of the bar, but now the longtime Franklin is the new @evviva.nola , and brings back a some talent in the kitchen that’s familiar too.
It’s pretty much Italian, but not strictly so.
