BBQ shrimp pie (trust me , the pie crust is under there, the peppery sauce sings with a dark heat approaching Szechuan tingle)
Smoky gumbo about as dark as cast iron
The chef’s classic duck with “quacklin’” , part of the repertoire since the Esplanade Avenue epoch
Blackened redfish, the dish that was once synonymous with Louisiana flavor but now is found credibly like this at only a handful of places.
