Upon reentry to New Orleans after a wonderful, food filled vacation, it was time to reunite with Louisiana food, and this distinct expression of it at @gabriellenola

It’s the kind of cooking you hope someone would prepare for you at home, if only you were so lucky.

BBQ shrimp pie (trust me , the pie crust is under there, the peppery sauce sings with a dark heat approaching Szechuan tingle)

Smoky gumbo about as dark as cast iron

The chef’s classic duck with “quacklin’” , part of the repertoire since the Esplanade Avenue epoch

Blackened redfish, the dish that was once synonymous with Louisiana flavor but now is found credibly like this at only a handful of places.
