I love the arroz negro with squid ink at @acamayanola , but this arroz a la tumbada stepping in for it lately was a delightful surprise too..

Squid, clams, shrimp carried by grains that have a delicate crispiness to the texture and buttery tomato flavor throughout.

The riff on the Manhattan with mole bitters made an elegant opening number.
