Recommended bowl: Best Jiro-style in town?

Buta Boshi aka 'Pig Star' is run by founder Takayuki Ootsuka, who has been working in ramen shops since he was 19 years old. Before opening here he put in time at Jiro outposts in Koganei and Hachioji, among other ramen shops. Thick, home-style noodles topped with slabs of pork chashu and a mountain of vegetables, all of it swamped in a rich, salty, tonkotsu shoyu soup. The staff may ask you if you want garlic, this is your chance to order free toppings like at Jiro. Aside from standard Jiro style bowls, Buta Boshi also serves spicy bowls and various seasonal specialties, many of which are incredible. จานหลักมีให้เลือกทั้งปลากะพงสามรสและเนื้อตุ๋นซอสกะทิเคี่ยวพริกแกง จริงๆ ดีทั้งคู่ แต่แอบเทใจไปทางเนื้อตุ๋นมากกว่าเพราะแผ่นหัวหอมเบิร์นด้านบนคือกลิ่นหอมที่พอแตะปลายจมูกแล้วรู้สึกฟินมาก😍

Recommended bowl: Duck & shoyu

Specializing in duck soup, with options for light, rich, ramen and tsukemen. The recommended bowl is probably the tsukemen served with a clear duck soup, using ducks sourced from Iwate Prefecture. The noodles are supplied by Kokoro no Aji Seimen and come floating in a pink dashi of kombu and sakura ebi (shrimp). Toppings include duck breast chashu and lemon to squeeze over the noodles midway through. This location was previously a different ramen shop under the famed Ittō group, which has a few well known shops in the Koiwa area. At @sushi_anaba in Copenhagen, Taisho @madsbattefeld has created something extraordinary: a deeply personal, Scandinavian interpretation of traditional Edo-Mae sushi.

The omakase unfolds with remarkable restraint:
turbot nigiri cured in kombu, pristine shrimp 🦐, razorclam, brown crab, herring, akami zuke, chutoro, kamatoro, uni; all carried by a very lightly packed shari with a pronounced, precise acidity.

One of the joys here is the intimacy. Being able to speak Danish with the taisho only deepens the experience.

When I asked Mads-san: “What’s your favorite fish to work with?”
His answer was simple: “Seasons.”

That philosophy runs through every bite.

รอบนี้ประทับใจ Poulet Roti with Morel & Creamy Sauce สุดๆ ไก่ย่างหนังกรอบ เนื้อนุ่มฉ่ำกำลังดี คู่กับซอสครีมเห็ดมอเรลที่เข้มข้น รสชาติดีมากจนแบบขอหยุดคุยแป๊บนึงนะ ขอโฟกัสที่ไก่ก่อน 😆
