This Chinese restaurant and ramen shop has been open and operating since 1946. The menu is extensive, with some popular choices including ebi soba or gomoku soba with shrimp and vegetables. In autumn and winter, there is a seasonal kaki (oyster) soba. The restaurant’s standard chicken and pork soup base is added to a wok along with fresh oysters (including oyster juice) sourced from Okurokami island, Hiroshima. This Chef has 3 Michelin stars, but it wasn’t what I was expecting… 😳

Part 1 of a special Chasing Stars series from the Algarve, a 4-day tribute at @vilajoya celebrating Chef Dieter Koschina’s @dieterkoschina 30 years of Michelin stars.

Kicking off: Chef @edip_sigl_official from 3⭐️ @essenz_edipsigl . He warned me to temper expectations, it was an away game, but what followed was a masterclass in precision under pressure.

Champagne on Wheels was the theme: free-flowing Pol Roger, Churchill’s favourite, and décor from 20,000 corks and bottles.

Flying appetisers, including his signature “Cloud”, led into 15 ambitious courses from roasted chicken with caviar and white truffle to hamachi with caviar and lemongrass.

Watching a chef cook for another chef is a rare kind of respect and as Koschina, the grand old man of Portuguese gastronomy, looked on, it was clear this was a tribute deeply earned.

Maybe it was the ocean view… maybe the serotonin from a sunset swim… but this felt like Bayern Munich playing away against PSG and winning with one man down.

🇹🇭 ร้านอาหารไทยไฟน์ไดน์เปิดใหม่ที่อยากป้ายยาให้ทุกคนไปลอง สั้นๆ คือ อร่อยมาก และราคาดีจนต้องถามว่าไม่ได้เขียนราคาผิดใช่ไหมคะ 😆

เชฟแทนเจ้าของร้านเล่าว่าอยากทำอาหารไทยรสแบบไทยแท้ๆ แต่มีลูกเล่นหน้าตาทันสมัย เลยออกมาเป็นคอนเซปต์อาหารไทย contemporary ที่หยิบแรงบันดาลใจจากหลายยุค ตั้งแต่สุโขทัย–อยุธยา–รัตนโกสินทร์ มื้อนี้เลยทำให้ตาโตตั้งแต่ small bite ยันของหวาน

จานที่ยังตราตรึงจนถึงตอนนี้คือ “เป็ดรมควันฟางกับซอสน้ำปลาหวาน” เป็ดย่างหนังกรอบมากและรสชาติซอสคือดีมากจนต้องถามเชฟว่ามันทำจากอะไรทำไมอร่อยขนาดนี้ และคำตอบคือซอสทำจากกระเจี๊ยบต้มกับน้ำปลามะเขาควายและไขมันเป็ด ว้าวมากจริงๆ 🥹

“แกงป่าปลาส้มใบแมงลักปลาดุกย่าง” ก็ประทับใจมาก เป็นแกงป่าโบราณที่ได้ความเปรี้ยวธรรมชาติจากปลาส้มเคี่ยวกับสมุนไพรสิบชนิด เผ็ดร้อนจากดีปลีแบบชัดๆ ส่วนปลาดุกดรายเอจ 3 วันแล้วย่างไฟอ่อนจนหนังกรอบ เป็นรสชาติไม่เคยเจอที่ไหนมาก่อน ชอบมากกกก

“กุ้งแม่น้ำสามรส” นี่ก็ปัง เป็นเมนูที่เชฟได้แรงบันดาลใจจากสีสไบสาวๆ สมัยอยุธยา ใช้กุ้งจากแม่น้ำตาปี เนื้อเด้งหวาน เสิร์ฟมากับซอสสามแบบ ส่วนตัวชอบซอสพล่าสีเขียวที่สุด เปรี้ยวตัดกับความหวานของน้ำพริกเผาด้านบนได้ลงตัวสุดๆ

เริ่มจะยาวไปละ น่าจะเล่าทั้งหมดคงไม่ไหว เพราะอร่อยทุกจานแบบไม่มีสะดุด เอาเป็นว่าใครสายอาหารไทย ร้านนี้คือ one of the must-try ในช่วงนี้เลย ไม่รู้ว่ายุคนี้จะหาไฟน์ไดน์ที่อร่อยขนาดนี้ ให้เยอะขนาดนี้ ในราคานี้ได้อีกที่ไหนจริงๆ 💖

The tsumami list at Sugita encompasses many "signature" items - this collage is a compilation from several different visits over a few years. They come in deceptively-small portions such that when Sugita-san mentions addons after serving the first 5 or 6, most diners are tempted to order more. I've made this mistake a few times and found myself full before the sushi started hitting the counter. Just some friendly advice if you're visiting here - pace yourself!

Most regulars here would probably say the ankimo and saba/iwashimaki (which I strangely didn't have a picture of) are the most notable items. The ankimo is super rich and sweet and is served in every season - it is extraordinarily good, and I've sometimes seen diners ask for triple orders of it. There is also a strong contingent of drinking snacks - misozuke ikura, salt-cured oyster, house-aged kazunoko, and uni tsukudani (I'll have a later post on tsukudani). The other contingent contains off-parts of certain neta that might be grilled - ika geso, or kobashira.
