Recommended bowl: Sweet golden miso

Oyaji serves miso ramen in the traditional style of Sapporo, Japan's miso ramen capital. During the prep process, miso and soup stock are tossed into a large wok and flash-cooked over high heat. The noodles – provided by a Sapporo-based noodle-maker – are eggy and served al dente. The cabbage and bean sprout toppings also get a quick bout in the wok over high flame before going into the bowl. Chashu tops it off.

The noodles, chashu and veg are all very satisfying, but it's the soup alone that elevates Oyaji to the next level. It's a blend of two varieties of Sapporo white miso, honeyed with a spectacular secret ingredient: Dutch lard imported all the way from Holland. It's rich, creamy and has an unmistakable sweetness.

Oyaji's head branch is in Sagamihara in Kanagawa Prefecture, and they have three shops in the Tokyo area. But this branch in Machida is considered by many to be the best. The shop has a friendly rustic atmosphere too. Order the Oyaji men set, which comes with a side of tasty gyoza. Less

เพราะทางโรงแรมเค้าเชิญ WORLD CHAMPION PASTRY CHEF อย่างเชฟ Masanori Hata มาคอลแลบด้วยกัน ซึ่งแน่นอนว่าเมื่อความละเอียดแบบญี่ปุ่นมาผสมกับความคลาสสิกของ The Authors’ Lounge ที่เราคุ้นเคยกันอยู่แล้ว มันเลยออกมาเป็นเซ็ตที่ทำให้ประทับใจทั้งหน้าตาและรสชาติ

ในเซ็ตมีขนมตัว signature ของเชฟมาด้วยทั้ง Apricot & Pistachio Macaron กับ Hazelnut Milk Chocolate Cake ในด้าน savouries แซนด์วิชต่างๆบอกเลยว่าดีทุกอัน

ปกติ Mandarin Oriental ก็มาตรฐานดีอยู่แล้ว แต่พอเป็นคอลแลบกับเชฟระดับนี้ มันยิ่งทำให้เซ็ตนี้น่ามาลองขึ้นไปอีกแบบไม่ต้องคิดเยอะเลย ใครเป็นสาย afternoon tea เซตนี้ไม่ควรพลาด มีถึงแค่วันที่ 25 เมษานี้เท่านั้นนะ✨

Lunch at the @thelauristonpub

What a perfect Sunday in Victoria Park, great lunch at the Lauriston pub, a walk around the park, the Sunday food market and and boat trip around the lake. What could be better???
I love this pub, its got everything! Great beers, fantastic cocktails and incredible pizza. We started off with some bar snacks, olives, fries and a beautiful little roll filled with mozzarella, salami and mortadella. Good start. Next, fleshy rolled and cooked in fire pizza's. Goats cheese, pine nuts, green olives,red onion, fior di latte. Cotton ham, salami and chorizo or smoked pancetta, mushroom and chilli. The pizza's are fantastic, and the home made dips are just as good, especially the nduja mayonnaise. For dessert a classic tiramisu and a Nutella pizza with fresh strawberries, both delicious.

Ahora que se vuelve a abrir la temporada aprovecho para retomar una visita épica a Cataria y la aldea de Sancti Petri, en Chiclana (Cádiz). Lo que el equipo de Elkano - bajo en mando de Aitor Arregui y Pablo Vicari y con la tutela de Emilio Marín, sabio pescador local que conoce esas aguas como la palma de su mano, ha creado un universo propio entorno a ese “terroir marino” que defienden a capa y espada.

Cataria es un restaurante de brasas en un hotel de lujo, sí. Pero es mucho más: es una lección de biología, de ecología, de conocimiento e investigación, de respeto al producto, a quienes lo proveen y a las tradiciones locales, de sociología incluso. Ellos aportaron la parrilla y Cádiz su producto, su paisaje culinario y su cultura.
