I visited recently, making this my second time here. The meticulously prepared sushi is incredibly delicious and served smoothly. Additionally, the chef's engaging conversation makes the time fly by. By the time I leave, I already find myself wanting to come back soon.
The restaurant is quite small, and the distance between tables feels oddly close. While the chef is nearby, he doesn’t particularly engage in conversation. While that’s fine, I believe such practices should be kept discreet, away from the eyes of other patrons. Many might find JPY 44,000 for a sushi course in Osaka quite expensive. However, this restaurant uses high-quality tuna and offers many dishes featuring fatty tuna, making this price quite reasonable. Although the quality of tuna can vary during this season, the tuna I had here was exceptional. I suspect they use well-preserved winter tuna that has been frozen. The rice is seasoned with white vinegar, perfectly complementing the toppings. The combination of the rice and toppings created a flavor that truly embodies "this is sushi." Everything was wonderful, but the dishes I found particularly delicious today were the thinly sliced fatty tuna, conger eel, bonito, fatty tuna, marinated tuna, sea urchin, sweet shrimp, and three types of hosomaki.- Thinly Sliced Fatty Tuna → A specialty of this restaurant. The balance of fat in the tuna is excellent, providing a melt-in-your-mouth texture and rich flavor.- Conger Eel → Skillfully filleted right in front of me, served with the skin lightly grilled. The filleting technique was impressive, allowing me to enjoy the delicate flavor of the conger eel without any bone concerns.- Bonito → Smoked to add a fragrant aroma, enhancing the richness of the bonito. The balance of aroma and flavor was outstanding, making it very enjoyable.- Fatty Tuna → The acidity of the rice and the high-quality fat of the tuna blend together, creating a different deliciousness compared to the thinly sliced version.- Marinated Tuna → Marinating the red meat enhances its natural flavor, allowing me to appreciate the quality of the tuna even more.- Sea Urchin → Creamy texture with a strong taste and sweetness of the sea urchin. There were no off-flavors, making it very delicious.- Sweet Shrimp → Perfectly cooked. Personally, this was one of the best preparations of sweet shrimp I've had. The texture and sweetness were exquisite, deserving the term "delicious."- Three Types of Hosomaki (Fatty Tuna, Tuna with Pickled Radish, and Kanpyo) → The hosomaki with fatty tuna pairs excellently with the high-quality tuna and the aroma of the seaweed. The tuna with pickled radish complements the fat of the tuna with its saltiness and texture. The kanpyo roll had a classic flavor, making it enjoyable until the end.【Staff Service and Response】The chef has a friendly demeanor. Being a graduate of Jinsei Academy, he is also a baseball enthusiast. If you know a lot about baseball, you’ll likely have a great conversation with him.【Atmosphere of the Restaurant】The interior has the feel of a long-established sushi restaurant. I was finally able to make a reservation for the omakase and visit the restaurant. Both the appetizers and sushi were incredibly delicious. The beer and Japanese sake paired perfectly with the dishes, allowing me to fully enjoy the experience. The aged options were also fantastic. The final dish, the egg, was excellent as well. I will definitely come back. It was a great meal.

I found an opening for OMAKASE and visited for the first time in 11 years. The first dish, featuring thinly sliced toro topped with grated Japanese radish and drizzled with soy sauce, immediately spread deliciousness throughout my palate. I enjoyed the entire experience at Jinsei, right up to the last dish of tamagoyaki. It's easy to see why this place is hard to book! If I have the chance to return, I will definitely come back. It was a great meal!

Both the dishes and the sushi are still prepared with great care, allowing you to fully appreciate the quality of the ingredients. The sushi, in particular, had an amazing harmony between the fish and the rice, and each piece was a delightful experience. A famous sushi restaurant on Michelin Street in Shinsaibashi, recognized as one of the top 100 sushi spots in the WEST on Tabelog and awarded Bronze.This place is quite difficult to book, especially for newcomers, but I happened to find an opening while checking for Omakase, so I made an immediate reservation and was able to visit during lunch on Golden Week.The interior features a small L-shaped counter with only six seats, giving it a cozy, local sushi shop vibe rather than that of a high-end sushi restaurant. The chef was friendly and engaged in conversation with me, even while working.The course began with a starter of toro (fatty tuna) mixed with grated daikon. The chef sliced the aged toro thinly right in front of me and combined it with freshly grated daikon and a light drizzle of soy sauce. The toro was rich in fat yet not overwhelming, definitely among the best in Osaka. Following this, there were five more appetizers, with the highlights being the clams from Kashima, Ibaraki, and the swordfish from Choshi, Chiba. The clams were quite large and packed with flavor, while the swordfish was impressively large and fatty. I also appreciated the freshly grated wasabi, which had a mellow aroma.The nigiri started with toro from Shiogama, Miyagi. This toro was also delicious, and the sushi rice was firm and slightly tangy, with a mild saltiness that melted in my mouth. There were a total of 14 pieces of nigiri, along with some maki and tamago (egg). I particularly enjoyed the torigai (bird clam), sweet shrimp, and anago (sea eel). The bird clam from Himeji was in season, thick, and sweet, while the sweet shrimp was cooked to perfection, and the anago was steamed and then re-cooked, making it incredibly tender.However, the total bill came to JPY 44,000 for the course and JPY 53,000 with drinks, which is top-tier pricing for sushi in Osaka. The chef started slicing a block of fatty tuna! At first, I thought he was cutting into the aged part... He sliced the tuna so thinly, it resembled shabu-shabu meat! Topped with grated daikon and perfectly seasoned soy sauce, it was a delicious start to the sashimi! The tender and plump surf clam, along with the rare boiled sweet shrimp, was incredibly tasty.
