I was taken to Jinsei in Shinsaibashi by my respected senior president, and I can't remember how many years it's been since my last visit. I had been excited ever since I received the invitation.Even though I had five glasses of wine at the pre-party, once I changed locations, it felt like I hadn’t drunk at all.The first dish served was the fatty part of the bluefin tuna, the "kamatoro." The moment it touched my tongue, it melted away.Next, the sake that was served as part of the omakase was none other than Namase Masayoshi, a sake from Shizuoka. My excitement just kept rising.I enjoyed some appetizers and then had the grilled ribbonfish rice.And then, it was time for sushi.Starting with the medium fatty tuna.Wow.This sensation after such a long time.The rice bursts and dances in my mouth.It’s not just delicious.It feels good.It’s a pleasure that accompanies the taste.Everything I eat has that delightful pop. The rice pushes back against my teeth. The elasticity is felt even in my gums. I believe this texture is something you can only experience here.This was part two of the meal, and at the end, a "everything included" roll was served. It was incredibly delicious. Apparently, it’s only available in the second part of the meal. It was my first time experiencing it.Thank you, senior!
