I have never seen availability on the reservation site for Jinsei, so when I finally found an opening, I quickly made a reservation and visited.I started my meal at 2:30 PM with the Omakase course priced at JPY 44,000.The restaurant has only 6 seats.From start to finish, the Edomae sushi was crafted with great care, featuring a variety of ingredients including tuna, surf clam, swordfish, eel, sweetfish, bonito, squid, mackerel, sea bream, horse mackerel, kohada, shrimp, sea urchin, and pike conger—all incredibly delicious.The chef's personality enhances the flavor of the sushi even more. Although the restaurant is small, this actually adds to the experience, as I could see the fish being prepared right in front of me, making the meal even more enjoyable.It's a hard-to-book restaurant, so it's not easy to visit, but I definitely want to come back.
