優しい味の味噌汁には大根の角切りが凄い量w
芯までやわらかく噛むほどにじんわり甘み
手作り感伝わるポテトサラダや小鉢.お漬物も👍
幾度となくフラレ続けようやくたどり着けたお味

Their newest concept, already launched in Milano, is a more casual counterpoint to their ⭐️⭐️⭐️ restaurant but still conveys the intense quality of cuisine and attention to detail which is the hallmark of the Cerea family.

🍴 วันก่อนแวะไป Table 1749 มา แล้วชอบมากจนต้องรีบเอามาป้ายยาทุกคน ที่นี่เป็นพื้นที่ให้เชฟมา pop-up หมุนเวียนกันไป ซึ่งรอบนี้ประเดิมด้วยเชฟ @philippprinzbach ที่หลายคนน่าจะคุ้นหน้าคุ้นตากันดีในบทบาท Executive Chef จาก Maison Dunand

แต่มื้อนี้ไม่ใช่การนั่งทานอาหารคอร์สแบบปกติ เพราะคอนเซ็ปต์คือเก๋มาก ก่อนเริ่ม เชฟจะแจก Passport คนละเล่ม แล้วให้เราเลือกอาหารในแต่ละคอร์สจาก “กลิ่น” ดมแล้วค่อยตัดสินใจ พอเลือกเสร็จก็จะได้ Boarding Pass ของจานนั้นมา ฟีลเหมือนกำลังจะออกเดินทาง สนุกตั้งแต่ยังไม่เริ่มกินเลยอ่ะ

ความน่ารักยังไม่หมดแค่นั้น เพราะพอทานเสร็จในแต่ละคอร์ส เค้าจะมีแสตมป์มาปั๊มลงใน Passport ให้ด้วยว่าเราได้ชิมจานไหนไปแล้วบ้าง ยิ่งแต่ละจานมีที่มาจากคนละประเทศ มันยิ่งให้ความรู้สึกเหมือนได้สะสมตราประทับจากการเดินทางจริงๆ เป็นกิมมิกเล็กๆ ที่ทำให้มื้อนี้มีเรื่องเล่า และยิ่งใครเป็นสายเที่ยวจะอินเป็นพิเศษแน่นอน

บรรยากาศโดยรวมคือชิล เชฟน่ารักคุยสนุก เป็นกันเอง มื้อเดินไปแบบเพลินๆ ไม่ยืดเยื้อ แอบกระซิบเบาๆ ว่าจานปลาหมึกกับเป็ดคือไฮไลต์มาก ขอให้ได้กินจริงๆ ✈️✨

Thought I’d film a little POV of lunch the other day at Filandón in Madrid. Love this place and captured what I could whilst eating. With 650+ covers it’s not a small restaurant, but somehow they still manage to make it feel intimate and homely.

Did a quick lap of the room and locked in the order pretty fast after seeing all the sharing plates and tapas landing on tables. Spanish classics done their way.

We started with lots of @cincojotas jamón Ibérico and crystal tomato bread, juicy clams from Carril, vegetables from the parrilla and an incredible akami tuna with onion, soy and fried quail egg. The tuna was phenomenal - sweet, salty and acidic in perfect balance, with the rich yolk bringing it all together. Couldn’t get over how good this was. I love Cinco jotas too.

For mains: Wagyu chuletón, arroz carabinero, and arroz with Iberian rib and Jamón Ibérico. The rice here is exactly how I like it - dry, deeply reduced, crispy at the base and packed with flavour. Intense, savoury and with a proper chewy texture from the reduction.

For me, the winner was the Ibérico arroz. Super meaty, ribs falling off the bone and so much depth in each bite. The red prawns were delicious too. To be honest, I liked most of what came out; including the chuleton that had a lovely crust.

It’s a big menu, so go with a group and order well. Top!! Less

Chaufa Aeropuerto, chanchito asado, verduras orientales, tortilla jugosa de langostinos y conchas y salsa nikkei.

Me gustó la propuesta de La Mar (Madrid). La cocina me convenció: platos muy bien presentados, frescos y agradables pero con cierta profundidad, con aliños medidos y equilibrados y con una elogiable cadencia en la mesa. Arroz sobresaliente. Cierto es que los precios son severos, la sala un poco fría “tipo franquicia”, la música algo bullanguera y el servicio es algo mecánico y se desconcierta ante cualquier cambio de guión. Pero, entre una coctelería muy aceptable - gran pisco -, la profesionalidad de la propuesta y la amabilidad del personal, lo cierto es que la nota global es positiva. Volveré. @lamar.madrid Less
