Great little taco spot in Dubai, led by Mexican-born chef @jon_collin , who’s brought an authentic taste of Mexican street food to jumeirah.

Very good guacamole, a tight selection of sauces and a menu that knows exactly what it’s trying to be. My favourites here are the suadero - black Angus brisket slow cooked for 24 hours, chopped and finished simply with diced onion, coriander and house sauce. No heat added by default; you build heat yourself at the table, exactly how it should be.

Their Corn tortillas are soft, warm and properly structured. Always the difference between a decent taco and a great one.

The oxtail birria and consome is rich and deeply spiced, layered with dried chillies and proper depth - the kind you’d expect from a traditional style birria, not an over-Americanised version. Queso fundido is a must too, especially if you load up their flour tortillas with a little charred jalapeno salsa.

And the churros with soft serve? Big win. Seemingly simple, but executed properly.

The vibe is casual here: red-and-white tiles, open kitchen and tacos assembled over a hot flat top right in view. A nice neighbourhood taquería energy rather than a polished gimmick. This is a great addition to the Dubai scene. Less

Chicken a la Grande on a grand Saturday night at @moscas1946 , our one of a kind Italian restaurant where any dinner feels like a family meal.

It also feels like the more people you bring here the more you get out of the experience, and the joy around this big table was as profuse as the garlic.

The platters come out of the kitchen and keep circulating around the table: a few orders of that chicken, oysters Mosca, of course, shrimp Mosca cooked in shell, crab salads, sausage Johnny, garlicky spaghetti, and the one and only pineapple fluff dessert.

The menu doesn’t change but I am forever learning new ways to enjoy it — this time, twirl some spaghetti through the oysters Mosca.

Great to see the @thebywaterca crew coming to the source and meeting the masters too.

Cash only as always. And as always, so worth the trip.

Going back through older photos and realized I never shared this lovely dinner at @giovedirestaurant in Chinatown.

Giovedi focuses on a menu built around Italian foundations with Asian influences, a combination that sets it apart within Honolulu’s dining scene. The space is lively without feeling overwhelming, and it fits naturally into the energy of Chinatown.

Since opening, the restaurant has received a fair amount of attention, including recognition from Bon Appétit and local nods through the Hale ʻAina Awards, which put it on many people’s lists.

For us, it was a relaxed night out with delicious food, drinks, and conversation, the kind of meal that is perfect for sharing.

豊橋うどんって何だ！？

文字通り、豊橋という土地で生まれたご当地グルメで、カレーを最後の一滴まで楽しむための仕掛けが最大の特徴。そこに自家製麺へのこだわりや、地元に根付いた食材選びといった土地ならではの流儀が重なる。その正統派を体験するなら、昭和21年創業の老舗『玉川 豊橋広小路本店』が外せない。戦後の街に寄り添い続け、豊橋の食文化を象徴する存在だ。

看板の「豊橋カレーうどん」を前にすると、この料理が大切にしてきた骨格がはっきりと見えてくる。まずはスパイスの香りがふわりと立つカレールー。とろみがありながらも重さはなく、そのルーをしっかり抱きとめるのが自家製のうどんだ。やわらかめに茹で上げられつつ、中心にはもちっとした粘りが潜んでいて、まるでカレーと麺が手を取り合うような一体感がある。噛むほどに小麦の甘みが立ち、ルーの輪郭を優しく整えてくれる。

そしてここからが豊橋式の真骨頂。麺の下からとろろが現れ、さらにその底にはごはんが控えている。この三層構造は、味を劇的に変えるためではなく、カレーの旨味を“最後の一滴まで美味しく運び切るため”の知恵だ。麺がカレーをまとい、とろろが包み、ごはんが受け止める。気がつけば食べ過ぎているが、これはもう仕組み上そうなるようにできている。

そしてトッピングにも豊橋の流儀が表れる。まずは豊橋産ウズラ卵と漬物。どちらも豊橋うどんの定義の一部であり、豊橋カレーうどんを語るうえで欠かせない存在だ。その横で揚げ物の香ばしさやネギの清涼感がそっと輪郭を整え、全体にほどよい立体感を生んでいる。

そして、豊橋うどんにもうひとつ欠かせない要素がある。それが“愛情をもって作ること”。三層構造に、自家製麺に、地元の食材に加えて、この想いがそっと重なることで、一杯の輪郭がようやく完成する。豊橋うどんとは、土地の知恵と作り手の温度が同じ器に溶け合った、ご当地グルメそのものだ。ご馳走様です。

Maybe it's a coincidence, but back in the fall nearly all of the top sushiya I've posted the past few weeks served kujira either as an appetizer, or sushi, and it was always nitani kujira. About 10 years ago, many restaurants at this level served more-prized nagasu kujira, but it seems that particular species has become exceedingly rare. The standard preparation is to serve it with a dab of grated chive or shoga to contrast the rich fat and any metallic flavors. Namba-san almost always serves it, and it is of the highest quality you can find in a sushiya.
