Warm aka-shari (as the menu notes, about 2°C warmer) is reserved for serving with the maguro. It seems like 10 years ago, many of the sushiya that served multiple types of shari were probably 65/35 between both types. These days, it seems the alternate shari only appears for a cameo once or twice. Am I imagining things?
