Clay pot rice is one of the dishes I always seek out in Hong Kong. It looks simple, but it demands precision.

Cooked slowly in a clay pot, the rice absorbs the flavors of its toppings as steam circulates through the vessel. The top stays tender and fragrant, while the bottom forms that prized golden crust that makes the whole dish.

江湖小棧 in Tseun Wan does it right. The pot arrives still sizzling, with pork fat and house soy sauce on the side. You pour, let it crackle, and watch the crust deepen before mixing everything together. Rich, smoky, and deeply satisfying.
