คอนเซปต์ของที่นี่คือการใช้ 🔥 เป็นตัวหลักในการเล่าเรื่อง ตั้งแต่การย่าง เทคนิค ไปจนถึง flow ของทั้งมื้อ โดยได้เชฟ @ricardonunes7 มาคุมครัว ทำให้ทุกจานมีความชัดทั้งในแง่ technique และ execution

และสิ่งที่ทำให้มันน่าสนใจมากคือการเอา American grill traditions มาชนกับ French technique ความดิบของไฟ + ความละเอียดแบบฝรั่งเศส เลยออกมาเป็นรสชาติที่บาลานซ์และมีมิติแบบชัดเจน

มื้อนี้บอกเลยว่าประทับใจหลายจานมากจริงๆ เอาจริงคือชอบแทบทุกจาน แต่มีบางจานที่รู้สึกว่า “ไม่ควรพลาดเลย”

• Chicken & Morels — เป็นอกไก่ที่นุ่มมาก นุ่มจนต้องสั่งเบิ้ลจานที่สอง
• Bluefin Tuna Pepper Steak — ชอบมากทั้งตัวปลาและรสชาติซอส เข้มข้นแต่ไม่เลี่ยนเลย
• Seabass ย่าง — เรียบง่ายแต่ทำออกมาได้ดีสุดๆ
• Truffle Mac & Cheese — ตอนแรกคิดว่าจะไม่ชิมแล้ว แต่คำแรกเท่านั้นแหละ…หยุดไม่ได้เลย 🥹

This is Denmark’s best vegan restaurant 🇩🇰🌱

In Copenhagen, @restaurant_ark proves that plant-based dining doesn’t have to be boring or preachy. I came in skeptical, but left impressed.

Fully vegan, highly sustainable, and driven by foraging and low-intervention wines, this is a restaurant with a clear philosophy.

Dishes like a turnip rose with ponzu beurre blanc and a potato mille-feuille with macadamia ajo blanco show real technique, creativity, and attention to texture with no compromises on flavor other than its natural limitations.

Offal x pizza quiz night at @circuspizza_panzers by @kitdelamain and @floffal was great fun and tasty. Banoffee pie was with beef fat caramel, chocolate coated guanciale and shaved beef suet on top / pizza with confit duck gizzards, smoked mozzarella, sage and truffle pangrattato / pizza with Turkish spiced whole lamb’s pluck, volcanic tomatoes, lemon, sumac and onions (their take on a lahmacun) / crispy pig’s head glands fried with wild garlic and lemon / ox heart carpaccio / lamb suet flatbread brushed with lamb fat / a whole lamb’s pluck was the prize for the runner up of the quiz. #foodinlondon #panzers #circuspizza #floffal #offal Less

火は長くいらない

塩をひとつ

口に入れると
サクッときて
すぐに香りがひらく

あとから
やわらかい甘みが
静かにのぼってくる

朝のレタスで
包んで食べる

シャキッ
サクッ

水と油と
青さと香ばしさが
いっしょになる

気持ちいいなと思う

ほんの少しのあいだしか
食べられない味

だから

Was passing thru Roanoke yesterday and had to make a pit stop at @mamajeansbbq to check out the new digs. Love the bar (and the Dr. Pepper old fashioned), and fortunately I was not dining alone . . .

Everything is excellent but the standouts were the Oxacan cheese sausage and those incredible direct-heat ribs. FYI - Madison says that's a week's supply of wood . . .
