The black pearl tasting menu at the 8 , is a perfect excuse to tackle the Grand Lisboa wine list and today’s winner was yet another great value Mersault .

The seafood focused menu was a perfect match and the highlight may well have been the appetiser combination of chilled Snow crab with cherry tomato and honey glazed BBQ pork . The sweetness of the crab absolutely popped and the caramelised char siu further built on that flavour profile , postscript was I was utterly salivating .

First bite is the signature Cristal blue shrimp dumpling in goldfish shaped have had this close to ten times now and putting aside the goldfish shape gimmick , this is an excellent Har Gao .

Double boiled soup with sea whelk , abalone and silky fowl was super clean and pristine . Each protein element was insanely tender as well which is rarely the case with this type of soup .

Steamed garoupa fillet is one of my favourite dishes here . A handsome tranche of fish paired with black bean and garlic , ginger .

A lobster and chicken broth infused with Sichuan spices is the final savory course , with mushrooms , lobster meat and vermicelli noodles , it is a satisfying finale .

Dessert was a structurally intact double boiled pear with parachute resin and birds nest , not overly sweet , this still matched well with the last of the wine . Less

【仙台中華そば 銘店嘉一 国分町店】

食材の価値を更新する一杯

ラーメン界において、親鳥は“硬い”“臭い”と敬遠されがち。市場では脇役、時には“廃鶏”という不名誉な呼び名さえ与えられてきた。だが、それは素材のせいではない。手間と技術を惜しむ側の都合だ。調理の腕があれば、親鳥は素晴らしい出汁素材であり、最高のチャーシューにもなり得る──仙台・国分町の『仙台中華そば 銘店嘉一 国分町店』は、そんな親鳥の逆転劇を描く舞台だ。

看板の「中華そば」は、親鳥だけで引いた清湯スープ。淡い黄金色に輝く表面からは、鶏脂の旨味が静かに香り立つ。塩と醤油の二択から選べるが、ここでは“醤油”を強く推したい。親鳥由来の香ばしさと、コク深いタレの重なりが見事に調和し、舌の上で多層的な旨味を織りなす。透明感がありながら、骨太。純鶏系スープの可能性を体現した一杯だ。

チャーシュー代わりにのるのも、もちろん親鳥の肉。しっとり柔らかいわけではないが、それがいい。繊維質な肉質をじっくりと咀嚼することで、じわじわと滲み出る旨味と香りが広がっていく。ひと噛みごとに、鶏という素材の奥深さが浮かび上がる。まさに“噛んで楽しむチャーシュー”。麺はやや太めで手打ち風のコシがあり、スープとの絡みも申し分なし。加水率のバランスも良く、食感の満足度が高い。

そして注目すべきは、ラーメンに添える“ご飯もの”。まず「鶏皮」。親鳥の皮を甘辛く煮付けた小鉢で、噛むほどにタレの旨味と鶏脂が滲み出す。これがもう、白飯に合わないはずがない。さらに「鶏飯」。こちらは炊き込みご飯スタイルで、親鳥の肉とごぼうの香りがしっかりと染み込んだ一膳。米のひと粒ひと粒に鶏の出汁が宿っており、噛むたびに土の香りとコクがじんわりと湧き上がる。

評価されなかった素材に、もう一度、光を当てる。そんな静かな決意が、この店の一杯には滲んでいる。派手さはない。だが、素材と真摯に向き合う料理人の誠実さが、舌と心にしっかりと残る。食材の“価値”を更新するような一杯──それが、『嘉一』のラーメンなのだ。

Have always loved a good soufflé and the one I just had at @restaurant_petrus was simply fantastic! The regal decor of the restaurant is almost one of a kind now in HK, and eating here with its gorgeous view of the city is always enjoyable. Glad to be back at「Aska」. Flawless execution and heart full hospitality. A few new dishes were really impressive. The pairing,no matter alcoholic or not, elevates the whole dining experience. One of the best Nordic restaurants in New York that should not be missed.
