Tucked away in Wan Chai, “𝗫𝗶𝗻 𝗥𝗼𝗻𝗴 𝗝𝗶” is a Michelin-starred gem known for elevating Zhejiang cuisine🥢 The original location hails from Taizhou, and the group now boasts over 20 branches across China and beyond, including this elegant Hong Kong outpost🇨🇳

We came specifically for their iconic 𝗣𝗲𝗸𝗶𝗻𝗴 𝗗𝘂𝗰𝗸 - pre-ordering is a must, as it takes about an hour to prepare⏳ The whole duck is presented table-side, then expertly carved in stages: first, the glistening crispy skin is served on its own to savour its delicate crunch🔪

Next, the succulent meat is sliced and paired with pancakes, hoisin, cucumber, and spring onion🤤 Finally, the leftover bones are wok-fried with salt and pepper - a deliciously satisfying finish to a three-part duck experience💯

名物の「北京ダック」は注文から提供までに1時間ほどかかるため、事前予約がおすすめです🕐 丸ごと焼き上げた鴨はテーブルまで運ばれ、まずはパリパリの皮が丁寧に切り分けられます❤️‍🔥

This season’s lineup may be our all-time favourite yet - featuring late summer and early autumn ingredients like edamame, corn, and “sanma” (Pacific saury)🌻

The pinnacle was the 𝗦𝗮𝗻𝗺𝗮 𝗖𝗹𝗮𝘆𝗽𝗼𝘁 𝗥𝗶𝗰𝗲, a rare variation making a comeback for the first time in four years (sanma is limited due to smaller catches recently)🎣

It was served with a sauce made from the fish’s liver blended miso, bringing out the natural umami in every bite🍚

どのお料理も温かさ・創造性・季節感にあふれる心に残るコースで、予約は困難ですが、空きがある場合は2か月先まで、12時から17時の間に電話で予約可能です🤳

今回のラインナップは、旬の枝豆やトウモロコシ、そして秋刀魚など、初秋から晩夏の食材がふんだんに使われており、個人的には史上ナンバーワン🥹

中でも秋刀魚の土鍋ご飯は圧巻で、年々漁獲量が減少しているため、4年ぶりの復活🏆 肝と味噌を合わせたソースが絶妙で、希少な魚の旨味を引き立てていました💯

İmam Çağdaş - Gaziantep (Turkey)

@imamcagdas1887 is an institution and one of the most popular restaurants in Gaziantep.

Following the staff`’s kind suggestion, I had a Lahmacun to open up my appetite. It arrived shortly thereafter, with a thin and crispy dough below a very well seasoned filling. A great start to a meal that was just about to get better.

From the beginning, I had my eyes set on a very specific dish that İmam Çağdaş specializes in, the Alinazik kebab.

It consisted of a bed of smashed eggplant on the bottom, covered in a yogurt sauce and then topped with three beautiful lamb kebabs, with a gentle drip of a chilli oil over it all.

I found the dish fascinating and very complex. The kebabs were inexplicably tender and melted in the mouth even before any biting effort was made. The eggplant was smoky, while the yogurt brought an elegant sourness to balance out the sweeter notes coming from the vegetable. It was an absolute masterpiece, one of those that Antep never ceases to provide.

As İmam Çağdaş also happens to be a very well established baklava brand, I knew what I had to do and immediately called the waiter once I finished my plate to order a few pieces to go along with some çay.

GEN is one of the “must” visit restaurants in Penang; and Johnson Wong is its chef/owner.

From the first dish on, I was intrigued. Like most chefs his generation, Johnson champions local ingredients and flavours—but he does it his own unapologetic way!

I must admit—there were some dishes that needed a few extra bites to grasp the chef’s intentions. That’s because this chef isn’t interested in merely parroting the ‘usual’ or expected ways ingredients are dealt with. He looks at things afresh, carefully calibrates his responses, and comes up with flavours and presentations that give a sense of coming from ‘out of the box’.

‘Educating’ his fellow Malaysians to understand his own uncompromising take on modern Malaysian-centric cuisine—that takes a lot of guts.
