La entrada en Skina y la secuencia de la zanahoria de aperitivo en la cocina.

Nueva visita a Skina, en Marbella. Si hay una persona que persevera en la consecución de la excelencia y en llegar a lo más alto, esa es Marcos Granda. En su nueva ubicación, Skina presenta un local mucho más desahogado, con una espectacular bodega en la entrada que opera como recibidor, un patio exterior y una sala amplia y elegante que preside una enorme cocina abierta donde ejercen Mario Cachinero y su equipo. Una propuesta refinada, precisa y elegante, muy marcada por el producto de temporada y con una línea clara y definida. Clasicismo retocado, mucho énfasis en las salsas (magníficas), materia prima impecable y una estética cuidada. Quizás se pueda echar en falta más riesgo o audacia en los platos pero existe un voluntario ejercicio de autocontrol en la oferta, que satisface a un público pudiente y exigente. La sala cumple de sobra aunque sufre con la profusión de bocados que se presentan y que, por momentos, abruman al comensal. La bodega es, simplemente, fastuosa, y se cobra como tal. Sigo pensando que le beneficiaría un formato menos encorsetado en el “modelo Michelin” que relajase un tanto el ritmo de la cocina y la sala y permitirse una experiencia más distendida al cliente. The perfectly balanced flavours of chef Jan Hartwig’s dishes, matching ingredients with technical brilliance and originality, honed over time, dish after dish. His restaurant was awarded three Michelin stars less than six months after opening back in October 2022 ( Jan was previously at Atelier, which earned its first three Michelin stars in 2017).
Here, the wonderful pike dumpling with N25 Kaluga caviar, “Hanseatic prawn”, Marcona almonds, brown butter, poached marrow and vin jaune sauce, the crunchy texture and exquisite acidity of pickled herring “Matjes”, and the tender deliciousness of the salmon trout from lake Schliersee, less than an hour from Munich, served with Bouchot mussels, lentils from the Swabian Alps, and Brussels sprouts and Mimolette.
‘Labor der Liebe’ was written on the open kitchen, but I’m sure it also referred to the dining room, where the two sides blended as one.

OCEANO PACÍFICO

A entronização dos chefes deixa na sombra aqueles que têm nas mãos o poder de elevar ou desfazer uma noite. A boa hospitalidade faz esquecer pratos menos inspirados. O contrário nunca acontece. No Ocean, a equipa de sala tem Igor Levit a tocar Brahms, enquanto Christian Thielemann dirige a Filarmónica de Viena. Nos últimos anos, raramente encontrei uma equipa com esta finesse. Nelson Marreiros e João Wiborg são tipos discretos, jogadores de equipa, cheios de classe.

Depois de anos de cozinha internacional e duas estrelas Michelin, Hans Neuner e o agora ausente Márcio Baltazar, voltaram-se para Portugal e para a diáspora. Um novo estímulo para a sua cozinha e storytelling. À procura do caminho para a terceira estrela.

O menu desta primavera foi de alto nível, técnica meticulosa, acidez corajosa. Menu mundano, de clara influência asiática, que poderia estar em qualquer fine dining holandês. Ou em Marbella. É preciso esforço para vislumbrar algum traço de cozinha portuguesa — ou da diáspora — que tanto nos insistem em contar. Provo uma longa coletânea de sucessos, a pedir depuração, cujo fio condutor é um storytelling cansado.

Onde vejo falhas, outros exultam.

Para a revista austríaca Falstaff, “Neuner is considered the best chef in Portugal” … “because he cooks more typical dishes than many of the locals.”
Não é coisa pouca.
A Falstaff prossegue, a olhar para o Portugal-dos-pequeninos com aquela visão caricatural e mente microscópica de colonizador que, entre um copo de champagne e meio frango da Guia, nos tira estatisticamente a pinta: “Home cooking was hardly valued in Portugal back then. It is thanks to Neuner that this has changed.”

No Ocean sobra em talento o que lhe falta em visão antropológica. Não é por sairmos de barco com pescadores, nem por cruzar o país de Harley, que se entende Portugal. Há vida para lá dos lugares-comuns. Aqui já se cozinhava antes do livro da Infanta. No Ocean assentará bem a terceira estrela. Mas entre capulanas, gadgets kitsch, loiças exóticas, ukuleles, balões, excesso, sobra pouco para o que sai da cozinha. A memória fica na sala. Onde a hospitalidade supera o prato. Less

Which is how we found ourselves at Nobu by the Beach, where the godfather of international Nikkei cuisine has perfected something rare: the art of the luxurious pause.

The pool comes first. Always. This is the genius of the format - you earn your hunger through stillness, through watching palm shadows shift across turquoise water while Latin-Asian cocktails arrive unbidden. The service here understands hospitality as a form of quiet intelligence. No performance, no theatre. Just competent hands and a carefully curated soundtrack that knows exactly what kind of afternoon this is.
When hunger finally arrives, we order like believers at a familiar altar. Yellowtail sashimi with jalapeño and ponzu — that sharp, clean heat Matsuhisa introduced to the world three decades ago, still teaching young chefs what balance actually means. Rock shrimp tempura arrives crisp and generous, refusing to apologize for being a greatest hit. The tuna tartare knows its place: textural, honest, built on knife work rather than Instagram geometry.

But here’s the surprise: desserts that don’t simply coast on beauty. They’re fresh, considered, aware that ending a long afternoon requires more than aesthetic perfection. It requires grace.

In a city where new restaurants open faster than you can book them, there’s something deeply satisfying about a place that’s already done the work. Nobu by the Beach doesn’t need to prove anything.
