Recommended bowl: Shoyu & niboshi only

Aomori style niboshi ramen, with clear soup made from water and niboshi only. Shoyu tare, minimal amount of oil added. Run by master Takasugi-san, who trained at a ramen shop run by his wife's parents for over 20 years before opening his first place in 2006, which closed and moved to the current location in 2014. Open 7am-3pm. Takasugi-san lives upstairs and comes down to make fresh house-made noodles every morning from 4am. He has eaten at least one bowl of his own ramen every day for over 30 years. Less

February 15, 2026 One of the truly great classic French kitchens in the world and one of our Top 5 all time favorite restaurants. 🌶️ Jae Bank ร้านส้มตำหนึ่งเดียวใน Emsphere ที่ทำให้เรารู้สึกเหมือนหลุดไปนั่งกินส้มตำข้างทางจริงๆ แต่รอบนี้มีแอร์เย็นๆแล้วก็ไม่ต้องกลัวเหงื่อไหล 😆 คอนเซ็ปต์เค้าชัดมาก เป็นฟีลส้มตำเจ๊แบงค์ วินมอเตอร์ไซค์เบอร์ 69 บรรยากาศทุกอย่างมันมีความสนุกและมีคาแรคเตอร์ชัดเจนดี

แต่สิ่งที่ทำให้ร้านนี้ต่างคือ “ของย่าง” เพราะเชฟแบงค์ @vishnubernardbank จากร้าน @aromkwan เค้าเป็นมือย่างอันดับหนึ่งอยู่แล้ว คอหมูย่าง ปีกไก่ย่าง และปลาดุกย่าง คือสามอย่างที่แนะนำว่า ต้องโดน

ส่วนส้มตำ ขอยกให้ “ตำปูปลาร้า” เป็นตัวท็อปของโต๊ะนี้ รสชาติมันแซ่บ นัว แบบที่กินแล้วต้องขอพักปากแป๊บนึง ใครกินเผ็ดไม่เก่งต้องบอกเจ๊เค้านะ 🤣

Corned beef and cabbage is always a Tuesday special at @mandinasrestaurant and, coincidentally, St. Patrick’s Day is Tuesday this year and that’s today!

If you’re headed out to celebrate, padding the belly with something this hearty is just good science.

The idea of chicken parm sharing a menu with shrimp remoulade is perfectly normal at Mandina’s, following its Creole-Italian mode.

So what explains the standing weekly special of the quintessential American-Irish corned beef and cabbage?

“My grandfather really liked it, and wanted it on the menu, so I’m not messing with it,” fourth-generation proprietor Cindy Mandina told me.

Open for not even a year Geoélia resides not far from the Eiffel Tower in the 16th arrondissement, and inside a cozy room Chef Camille Saint-M'leux is quickly gaining notice for food that trends rich but restrained, traditional but viewed through a new lense. Trained by the likes of Alain Solivérès and Christian Le Squer, the restaurant itself named after his family's boat, roots in Brittany see seafood as a primary focus, and although the signature lobster is indeed special it was the sizeable sweetbread atop a half artichoke with Sauce Périgueux that stole the spotlight.

【とんかつ美濃屋】

⁡北大塚の商店街の途中で暖簾を掲げる『とんかつ 美濃屋』。店の来歴は東十条の「みのや」につながり、そこで三代目として厨房に立っていた料理人が独立し、屋号の音を受け継ぐように「美濃屋」を名乗ったことが出発点。揚げ物の扱い方や定食構成の基礎には、この経歴がそのまま反映されているのだろう。

今回注文したのは「ミックスフライ定食」。構成はエビフライ、タラフライ、カニクリームコロッケの3種。皿の上で整然と並べられ、いずれも揚げたてで届く。

エビフライは細かいパン粉をまとわせつつ、衣にはしっかりと厚みがあるタイプ。噛むとザクッとした音のあとに、海老の身がぷりんと弾む。衣の香ばしさが前に出ながら、後半で海老本来の甘みが追いかけてくる構成で、タルタルの酸味がその輪郭をはっきりさせる。
タラフライは醤油で。白身の厚みが均一でふっくら。醤油を軽く垂らすと、衣の香ばしさと白身の柔らかい旨味がくっきり浮き上がる。
カニクリームコロッケは丸型で、割ると中からクリームがとろりと流れ、カニの香りが明確に立つ。衣の存在感とクリームの滑らかさが対照的。

そして今回一番のお気に入りになったのが、追加で頼んだ単品の「メンチカツ」。厚みがあり、ナイフを入れた瞬間に中心から一気に湯気と肉汁が噴き出す。噛むと中がほぼ液体かと思うほどジューシーで、肉の粒感より先に旨味の水分が口いっぱいに広がる。その後から粗めの挽き肉の存在感が追いかけてくるイメージ。ミックスフライ3種を食べ終えたあとでも印象が上書きされるほどで、この一品で店の揚げの実力がはっきり見えた。

白米はツヤのある炊き上がりで粒立ちが良い。噛むほどに甘みが出て、揚げ物との相性が良い。豚汁はキャベツと豚肉を中心とした構成で、味噌の輪郭は穏やか。途中で七味を少し加えると味が締まり、印象が変わる。添えられた千切りキャベツは細めで水分量があり、揚げ物の合間に口のリズムを整えてくれる。

総括すると、この定食は構成している要素のどれを取っても完成度が高い。フライは種類ごとに揚がりが安定していて、白米と豚汁も脇役に回らず、最後まで品質が落ちない。途中で追加したメンチカツも含めて、食べたものすべてが同じレベルで揃っていたのが印象的だった。全体が高水準でまとまっている、安心して選べる一軒。ご馳走様でした。
