Singapore’s iconic 𝗖𝗵𝗮𝘁𝘁𝗲𝗿𝗯𝗼𝘅 𝗖𝗮𝗳𝗲 has opened its Japan flagship earlier this year in Marunouchi, bringing over 50 years of heritage rooted in elevated street food🎊

The highlight was, without question, the 𝗠𝗮𝗻𝗱𝗮𝗿𝗶𝗻 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗥𝗶𝗰𝗲 - incredibly tender, juicy chicken paired with deeply fragrant rice and a trio of house-made sauces that tie everything together perfectly🍚

We also enjoyed the 𝗚𝗿𝗶𝗹𝗹𝗲𝗱 𝗦𝗮𝘁𝗮𝘆, smoky and caramelised, served with a rich, sweet and savoury peanut sauce🔥

シンガポール発の名店「𝗖𝗵𝗮𝘁𝘁𝗲𝗿𝗯𝗼𝘅 𝗖𝗮𝗳𝗲（チャターボックス・カフェ） が今年1月、丸の内に日本初上陸🥳 屋台料理のルーツを大切にしながら、洗練された一皿へと昇華したラインナップが魅力です🏮

中でも印象的だったのはもちろん名物の「マンダリンチキンライス」💯 しっとりジューシーな鶏肉に、旨みたっぷりのジャスミンライス、そして自家製チリソース、ジンジャーピューレ、ダークソイソースの3種のソースが絶妙に調和❤️‍🔥 長年守られてきた味わいに納得の一皿でした👏

Tucked away on a quiet corner in Motoazabu, the restaurant serves just 10 guests around a L-shaped wooden counter. Shunji San carefully balances tradition while carving his own path with innovation - we see inspiration from his travels in his dishes such as the ankimo with fugu skin plated in Singapore Lo Hei style. The meal started with the making of the shari, followed by an impressive parade of the day’s hokkigai and tsubugai. The tsumami featured highlights including the tsubugai and tuna cheek while the maki with the golden mountain of murasaki uni stole the show in the latter half of the omakase.

In Fukuoka,「Sushi Gyoten (鮨 行天)」feels like one of those rare places where reputation and presence fully meet. Kenji Gyoten (行天 健二) opened the restaurant in his hometown of Shimonoseki in 2009, moved it to Fukuoka in 2012, and later earned three Michelin stars there. In 2025 fall,「Sushi Gyoten (鮨 行天)」entered a new chapter with a move to a new location in Fukuoka, where the restaurant adopted a membership system, making the experience feel even more private and exclusive.

His foundation runs deep. Born into a sushi family, Gyoten later trained in Tokyo at「Araki (あら輝)」under Mitsuhiro Araki (荒木 水都弘), a formative experience he has said shaped the way he lives and works. From that lineage came a style that is disciplined in its Edomae core but very much his own in expression.

What stands out most at「Sushi Gyoten (鮨 行天)」is his carefully prepared series of tuna dishes, very much in line with the legacy of「Araki (あら輝)」. Beyond that, the restaurant’s identity is built on merticulous sourcing and control: akazu-seasoned shari, top-grade fish gathered into Fukuoka from across Japan, and an omakase shaped around the idea that each encounter is unique to that day. The result is a sushi experience that feels both rigorous and deeply personal.

Recommended bowl: IEKEI w/ negi

Yokohama style IEKEI is made from tonkotsu soup, chicken oil and shoyu tare. Noodles are supplied by Sakai Seimen, same as most shops with Yoshimuraya roots. Topped with green negi sourced from the Setouchi area of Japan, white rice and takuan pickles on the side. The master trained at a few different ramen shops in Yokohama for over 30 years before becoming the first apprentice at the well known IEKEI shop Suzukiya. Open since August, 2020. Less
