While the room’s lighting somewhat affected the the food photos, it certainly did not compromise Chef William’s brilliant cuisine. 🇫🇷 Liana ร้านอาหารแนว Contemporary French ของเชฟ @bic.warat และเชฟ @soohyunlees ที่ตามกินมาตั้งแต่วันแรกที่เปิด แล้วต้องบอกตรงๆว่ารอบนี้คือมื้อที่ชอบที่สุดตั้งแต่เคยมา มันไม่ใช่แค่ดีเป็นบางจาน แต่ทุกจานตั้งแต่ small bites ยัน desserts มันลงตัวแบบที่รู้สึกได้จริงๆ จนเป็นครั้งแรกที่กล้าพูดว่า คอร์สนี้ไม่มีจานไหนเฟลเลย

รอบนี้เค้ามีคอร์สใหม่ “From the Coast” เป็นซีฟู้ดล้วนที่ทำออกมาได้ดีมาก แต่คอร์สปกติก็ยังมีอยู่นะ และทำได้ดีไม่แพ้กันเลย ไหนๆก็มาแล้วเลยลองสั่งมาทั้ง 2 เมนูแบ่งกับเพื่อน แล้วกลายเป็นว่าเลือกไม่ถูกเลยว่าชอบอันไหนมากกว่า เพราะแต่ละเมนูมันมีเสน่ห์ของตัวเองชัดมาก แต่ถ้าถามว่าจานไหนจำได้ขึ้นใจที่สุด ต้องขอยกให้จานกุ้งเลย 😍

ส่วนของหวานไม่ต้องพูดเยอะ ใครเคยเห็นผลงานของเชฟ Soohyun ใน IG ก็น่าจะพอเดาออกว่ามันไปสุดได้ขนาดไหน

ส่วนตัวคิดว่า Liana วันนี้คือเวอร์ชันที่นิ่งขึ้น มั่นใจขึ้น และชัดเจนมากขึ้นในสิ่งที่เชฟอยากเล่า ถ้าใครเคยมาแล้ว อาจถึงเวลาที่ต้องกลับมาอีกครั้ง แต่ถ้ายังไม่เคย ตอนนี้คือจังหวะที่น่าโดนมากจริงๆ 👏🏻👏🏻👏🏻

Pollo de la Granja Saint Germain asado en la chimenea con su piel crujiente a la cebolla, magbígico. Terrina de babá borracho con pasas y crema ligera al Armagnac.

La Fermé Aux Grives es el guiño de la Maison Guerard a la cocina local de Las Landas: potente y sin disfraces, una culinaria de fuego, leña y herencia.

Un concepto brillante que marca un camino a seguir para los restaurantes de cocina tradicional: platos clásicos de aprovechamiento de la cocina francesa y carnes asadas en la chimenea, a la vista de la sala. Todo ello servido en raciones tremendamente generosas. Rusticidad y legado sin concesiones en un menú de tres platos a elegir entre una veintena de opciones por 60€.

Nivel alto en materias primas y cocina bien ejecutada sin perder de vista ese aire informal de mesón, al que contribuye un servicio joven que contagia su entusiasmo. Among crawfish boilers, there are the old sages calmly proceeding with the process they’ve always used, perhaps inherited from their forebears.

Others are technicians, who approach the task as a scientific inquiry and may as well be wearing lab coats.

And then there are wild ones, those for whom the crawfish boil is not a task to be completed but a passion to be pursued.

They leap to the work, purge with purpose, and say they have secrets but then giddily divulge them while proffering a sample from the pot.

Spend a little time around Steven Boulet, maybe just across the counter at his Metairie restaurant and seafood shop @bontempsboulet , and it’s clear he belongs to that last category.

He’s a man who seems gleeful to have found his calling and is living it to the hilt.

The result is superlative boiled crawfish at Bon Temps Boulet’s, and some surprises from the barbecue smoker as well.

The standout was the 𝗣𝗿𝗮𝘄𝗻 & 𝗖𝗿𝗶𝘀𝗽𝘆 𝗥𝗶𝗰𝗲 𝗦𝗮𝗹𝗮𝗱 - packed with herbs, crunchy textures, and lifted by a punchy 𝘺𝘶𝘻𝘶-𝘬𝘰𝘴𝘩𝘰 dressing🍋‍🟩

We also enjoyed the 𝗦𝗲𝘀𝗮𝗺𝗲 & 𝗕𝘂𝗰𝗸𝘄𝗵𝗲𝗮𝘁 𝗙𝗹𝗮𝘁𝗯𝗿𝗲𝗮𝗱, layered with chive feta and a fragrant chilli oil, alongside the delicate 𝗖𝗿𝘂𝗱𝗼 with fennel and bright citrus notes🫓
