Makotoya is rather highly ranked for a shop specializing in the down-n-dirty Yokohama IEKEI style of tonkotsu shoyu. The master here trained at Kawasakiya, another top IEKEI shop. Creamy, rich, porky tonkotsu soup, made with negi and topped with oil. Noodles are special-ordered from Sakai Seimen, which means that this shop has direct connections to Yoshimuraya, the OG’s of IEKEI. Unlike most shops in this genre, standard bowls don’t come with many toppings, just chashu and nori. The shop has never taken an interview. Open since 1996. Less

La Brinca in Ne @la_brinca has to be one of the most special and magical restaurants in Italy. It’s quite hard to get to but the location is amazing and many of the dishes are ancient local recipes which are almost impossible to find anywhere else. Swipe to the end to see the menu. 14 seats. One cover a night. A 10-course menu for €89. Not for money, but for passion.

From a beet tartlet with char liver to sourdough focaccia that had me hunting like a junkie for another fix, Arc proves creativity never sacrifices flavor. Ambitious dishes like char with kimchi show they’re ready to play with the best.

Not everything is perfect, the layered kohlrabi sauce leaned too salty, but the progress and identity here are undeniable. Star or no star, Arc already has what it takes.
