From a beet tartlet with char liver to sourdough focaccia that had me hunting like a junkie for another fix, Arc proves creativity never sacrifices flavor. Ambitious dishes like char with kimchi show they’re ready to play with the best.

Not everything is perfect, the layered kohlrabi sauce leaned too salty, but the progress and identity here are undeniable. Star or no star, Arc already has what it takes.
