I had the pleasure of visiting Matsukawa again after a long time.Watching the beautiful work of Chef Matsukawa from across the counter was truly inspiring.His sincere demeanor and meticulous attention to detail made every moment of his work simply beautiful.Warm, fluffy oshibori (hand towels) were served, possibly the most delightful oshibori in Japan.The first dish featured abalone from the Outer Bōsō Peninsula, sea urchin, and leafy vegetables with a refreshing jelly.The sea urchin was from Kyushu (if I remember correctly).On a hot and humid day, the tenderly cooked abalone paired with the refreshing jelly and the sweetness of the red sea urchin was delightful.The second dish was steamed rice with Aomori's spiny crab.I didn’t ask about the saltiness percentage, but the use of caviar was exquisite.The sweetness of the crab and the subtle richness of the inner roe, combined with the perfectly cooked rice, made this dish truly exceptional.It was a culinary masterpiece, a harmonious blend of flavors that felt like a complete entity.Each flavor molecule seemed to connect, reminiscent of a chemical structure diagram.It was a cosmic deliciousness.I felt as if this dish could be patented as a perfect creation in this world.I know it sounds a bit nonsensical, but I was overwhelmed by its profound umami and depth of flavor.As I watched Chef Matsukawa and contemplated the perfection of the dish, I realized we were still in the early stages of the course.Yes, I know it sounds a bit premature to say this, but I couldn’t help but feel that it might sound cliché.Tears began to well up in my eyes from the sheer emotion.I’ve felt moved by food before, but this was the first time I actually cried.Something suddenly welled up inside me; I was truly touched.My soul trembled.This was a dish that truly captured my heart.I apologize for getting carried away.Let’s refocus.The third dish featured flounder from Awaji Island, red clam from Yuriage, and bird clam.Each sashimi was, of course, outstanding.I savored each piece of flounder slowly.It was blissful; this is what it means to truly savor a meal.Since I was alone that day, I was completely focused on the dishes in front of me. It was pure happiness.The fourth dish was a lightly boiled tiger pufferfish, dusted with flour, revealing a gelatinous yellow substance inside.This was the skin of the tiger pufferfish.Growing up in Fukuoka, I often ate this fish during the summer, and I’ve always preferred it over fugu.This was the first time I had it served with the yellow skin wrapped around the flesh.The aroma of the brown rice cake on top and the subtle broth were perfectly balanced, and as the course progressed, I realized that the mild saltiness of this dish was essential.While it was a fish dish, the aftertaste was enveloped in the nuttiness of the brown rice cake, making it a wonderful dish with a delightful texture.The fifth dish featured conger eel and incredibly sweet fried corn from Okinawa, along with bachi-ko (a type of fish).I was amazed by this combination.The sweetness of the corn was used so effectively, and the bachi-ko added a gentle yet impactful punch to the conger eel dish, keeping it exciting.I understood why such sweet corn was included at this point in the meal.The pairing of fish and sweetness was exquisite.I was ringing bells in my heart, continuously marveling at this overwhelming course.The sixth dish featured young sweetfish from Lake Biwa.The bitterness and texture were perfect.Here, I was enveloped in a mature bitterness that awakened my taste buds.It was delicious, truly delicious.I considered having some sake multiple times, but since I was alone today, I decided to focus solely on the food and opted for a JPY 2500 sparkling tea from Shizuoka (which I highly recommend!).The seventh dish was eel from Lake Shinji.The contrast between the fluffy flesh and the crispy skin was astonishing.The grilling was superb.The choice of sweet vegetables paired with the fish was impressive, showing how ingredients can be combined so beautifully.The eighth dish was another monstrous creation: a giant turban shell from the same Outer Bōsō Peninsula!And the wonderful, wonderful wakame seaweed.The turban shell was cooked in a rich broth, which was generously poured into its shell, allowing us to enjoy everything together.It was delicious to the point of madness.I savored it deeply.I grew up eating turban shell grilled over charcoal during summer vacations in Genkai-nada, so I love it.But I had never seen such a large turban shell before.And I had never tasted such an elegantly prepared turban shell dish.I couldn’t ask where the wakame was from, but it was delicious.I’m reminiscing about that exquisite soup now, longing for it.The ninth dish was soba, followed by the tenth dish featuring meat and flower pepper.I thought this might be the last of the flower pepper, so I gratefully enjoyed it.Finally, we had rice, a junsai (water shield) soup, and a dessert of mizu yokan (sweet jelly).It was a truly wonderful course that moved me to tears.Thank you very much. Inside, there are only eight counter seats, creating a compact yet serene space dominated by calming blue tones. The minimalist decor directs attention naturally to the food itself.The menu consists solely of an omakase course, featuring a lineup centered around seafood that allows diners to fully enjoy the bounty of Suruga Bay. While there may be occasional game meat included when available, the chef emphasizes a focus on fish, making it an irresistible choice for seafood lovers.Both alcoholic and non-alcoholic pairings are available for drinks, with the added bonus of half pairings for each option. The sweet tomatoes have a mild acidity, concentrating their sweetness and umami. Combined with the saltiness of the karasumi, this dish achieves a simple yet profound flavor. The pairing is a white from Northern Italy, Monferrato Bianco Sej 2023 Frasca, with citrus aromas and a transparent taste that harmonizes beautifully with the sweetness of the tomatoes.●3. Deep-fried Mameaji Seasonal Mameaji simply deep-fried. Despite their small size, they are packed with flavor, offering a light yet robust texture. They pair well with the previous tomato sauce, allowing for a delightful aftertaste.●4. Aji Next is Aji, featuring a composition of citrus vinegar, red onion, and pickled beets. This dish is particularly striking, with the thick flesh boasting an astonishing amount of fat and umami. The chef himself remarked, "This Aji is incredible!"—a testament to its exceptional quality that redefines previous impressions of Aji. The pairing is a rosé from Sicily, Etna Rosato 2024 Tenuta delle Terre Nere, made from local grapes. Its floral aroma and delicate acidity elevate the fish's umami.●5. Charcoal-grilled Buri Charcoal-grilled Buri with a crispy skin, served with a grain mustard sauce, wasabi oil, garlic powder, and spinach. Compared to those from the Sea of Japan, this Buri has a milder fat content, concentrating its flavor. The smoky aroma from the charcoal, combined with the mustard and wasabi accents, creates a multi-dimensional dish. The pairing is a Burgundy Chardonnay, Domaine de Villaine Rully Les Saint Jacques, where the oak nuances resonate beautifully with the Buri's smokiness.●6. Nibe Meunière Nibe prepared as Meunière, accompanied by a sauce of Kakegawa tomatoes and shrimp, along with Shizuoka white asparagus. The flesh is light and delicate, supported by the umami of the crustaceans and the acidity of the tomatoes. The accompanying bread features butter blended with seaweed, adding a subtle oceanic nuance. The pairing is a white from the Rhône, Saint Joseph Blanc Ribaudes 2024, rich and full-bodied, balancing the dish perfectly.●7. Grilled White Sweetfish with Scales The white sweetfish is grilled with its scales raised, served with a puree of Kita Akari potatoes and a sauce of red wine and hojicha (roasted green tea). The moist, fatty flesh contrasts pleasantly with the crispy scales. The sauce, infused with Japanese elements, and the sweetness of the potatoes gently envelop the dish. The pairing is a Gamay-based red, Fleurie Grille-Midi, where the fruitiness and gentle tannins complement the dish.●8. Baked Hanadai in Pastry This specialty dish features the moist and fatty Hanadai, enhanced by slowly sautéed onions that bring out its sweetness and the refreshing aroma of shiso leaves. A rich cream-based sauce envelops the dish, adding depth and unity to the flavors. All of this is encased in a beautifully baked pastry. When cut open, the steam and rich aroma of butter rise, releasing the fish's umami, the sweetness of the onions, and the freshness of the shiso in a delightful burst. This dish truly exemplifies the high level of craftsmanship worthy of being called a specialty. The pairing is an Alsace Riesling, Alsace Riesling 2021 Rolly GASSMANN, with a slightly sweet style that harmonizes beautifully with the creaminess.●9. Risotto Risotto featuring sautéed and then charcoal-grilled squid, combined with barley, brown rice, and seaweed from Hamana Lake. Topped with deep-fried kale and powdered umeboshi (pickled plum), it adds accents of aroma and flavor. The smoky aroma, grainy texture, and flavors of seaweed and ume create a deep dish with a Japanese nuance. The pairing is a Pinot Noir, with delicate fruitiness that gently accompanies the dish.●10. Compote of Peach-scented Strawberries from Yaizu Strawberries with a peach-like aroma, known as "Momo Kaoru," are made into a compote and served with a scoop of Japanese black tea sorbet. The vibrant aroma and gentle sweetness make for a light dessert, perfect for the end of the course. For the after-dinner drink, I chose Paul Giraud 25 Year Extra Vieille from several options. Its robust yet delicate flavor deepens the aftertaste.●11. Ice Finally, a milk ice cream paired with honey from Hiroshima. Simple yet highlighting the quality of the ingredients, it concludes the course with a gentle sweetness.In total, I enjoyed 11 dishes. As anticipated, the course was entirely composed of seafood, centered around my favorite Aji, delivering an exquisite taste. The chef's sincere approach to the blessings of Suruga Bay, combined with honed skills and sensibilities in each dish, has established a unique "Yaizu French" experience that cannot be found anywhere else.I look forward to visiting again.It was a great meal. The sushi overall had a wonderful harmony between the rice and the toppings, with the rice melting in my mouth and releasing sweetness as I chewed. The perfectly deboned sardine was particularly impressive, dissolving in my mouth without any resistance, setting it apart from others.I also ordered some shirasu (whitebait) and Hokkigai (surf clam) small pieces, and the small pieces were large, crunchy, and had a strong sweetness, making them delicious.This time, I was able to chat quite a bit with the chef due to my seating position, which made for a great experience, and I definitely want to come back. Kamatama soba is a composition of noodles soaked in shoyu tare sauce, katsuo dashi soup, pork back fat and sesame oil, finished with a raw egg. Other toppings feature pork chashu, menma, spicy negi and ground black pepper. The noodles are house-made from scratch each morning at a sister store, Izohachi in Yūtenji. Free condiments on the counter include fried negi, spicy garlic chives, chili oil, garlic, ginger, yuzu shichimi and shiitake vinegar. Based on kamatama udon (udon w/ dashi, shoyu and a raw egg).
The inspiration for Napoleonken comes from the idea that if the noodles are really great, this is how you want to eat them. Run by master Komiya-san, who founded the legendary Tsukemen Tetsu. 🇮🇳 ถ้าให้นึกถึงร้านที่เปลี่ยนมุมมองที่มีต่ออาหารอินเดียได้ Gaa คงเป็นหนึ่งในนั้น ร้านอาหารมิชลิน 2 ดาวของเชฟ @arorgarima เชฟหญิงชาวอินเดียคนแรกของโลกที่ได้รับดาวมิชลิน ผู้ถ่ายทอดรากฐานอาหารอินเดียออกมาในรูปแบบที่ร่วมสมัย แต่ยังคงเอกลักษณ์ของรสชาติไว้ได้อย่างน่าประทับใจ
รอบนี้กลับมาลองเมนูซีซั่นใหม่ และต้องบอกว่าชอบกว่าคอร์สก่อนมาก ทุกจานมีรายละเอียดที่ชวนให้ประทับใจ แต่ก็ยังทานง่ายจนรู้สึกว่าคอร์สผ่านไปเร็วมาก
เริ่มด้วย Tuna Bhel ที่ให้เคลุกทุกองค์ประกอบเข้าด้วยกันก่อนตักลงบนแผ่นแป้งกรอบคล้ายทาโก้ แต่ละคำเต็มไปด้วยรสชาติและเนื้อสัมผัสที่แตกต่าง ทั้งความสดชื่น ความเปรี้ยว หวาน มัน และความกรุบกรอบ เป็นการเริ่มต้นมื้อที่ทั้งสนุกและน่าประทับใจมาก

จานที่ยกให้เป็น No.1 ของมื้อนี้คือ Summer Curry แกงปูแบบเย็นที่ทั้งสดชื่น กลมกล่อม และมีมิติในทุกคำ เป็นจานที่กินแล้วรู้สึกว้าวที่สุดของคอร์ส และอยากให้ทุกคนได้ลองจริงๆ
อีกสองจานที่ชอบมากคือ Morel & Malai ที่หอมกลิ่นสโมคและละมุนสุดๆ ส่วน Chicken Kebab ก็ทำออกมาได้ยอดเยี่ยม ไก่นุ่มกำลังดี แต่ที่เซอร์ไพรส์กลับเป็นข้าวที่เสิร์ฟมาด้วย อร่อยจนเด่นไม่แพ้ตัวไก่เลย
ปิดท้ายด้วย Tandoori Story เมนคอร์สเวอร์ชันมังสวิรัติที่ใช้ทุเรียนหมอนทองเป็นวัตถุดิบหลัก เชฟตีความออกมาได้แปลกใหม่จนแทบลืมไปเลยว่ากำลังทานทุเรียน
เป็นอีกมื้อที่ทั้งอิ่มและประทับใจ รสชาติยังคงมีกลิ่นอายของอาหารอินเดีย แต่ถูกนำเสนอในแบบที่ร่วมสมัย ละเมียดละไม และเข้าถึงง่าย ค่อนข้างมั่นใจว่าต่อให้ไม่ใช่คนที่คุ้นกับอาหารอินเดีย ก็น่าจะเอ็นจอยกับมื้อนี้ได้ไม่ยาก
