Para evitar malentendidos constataré que el Beach Club de Finca Cortesín no es un sitio apto para foodies influencers y sus eternas expectativas. Es verdad que el lugar es estéticamente espectacular - “instagrameable” se dice ahora - y que que comida se presenta con el mimo y cuidado oportuno. Pero esto no es un club de playa al uso, es un lugar elegante y tranquilo para comer junto a la playa. Lutz Bösing, Alex Pinton y su equipo de cocina plantean platos sencillos en la carta y combinan clásicos con una cocina más ambiciosa. Sólo una carta de vinos demasiado escueta desmerece la oferta. When I first heard about @restaurant_aure , it wasn’t just the food that caught my attention. It was the story. An 18th-century gunpowder house, auctioned off to fate, and a team of dreamers, @emmanoerbygaard and @nicky.arentsen ,holding their breath, wondering if they’d even get the keys… and just months later, a Michelin star shines above their door.

蜆のラーメン / Shijimi Ramen / Shōnen Kyoto — Nishitenma, Osaka

Clear chintan soup contains Amakusa-Daio chicken, pork and shijimi clams. Medium-thin noodles are supplied by Menya Teigaku, paired with shio tare and chicken oil. Topped with pork chashu and green negi.

Shōnen Kyoto is a sake/wine-driven bar that relocated from Kagoshima to Nishitenma, Osaka. The bar is now located in a building that is also home to a famous sushi restaurant, an award-winning tempura restaurant, a members-only yakiniku restuarant and an udon shop that customers queue up at daily. The “Ken-chan Ramen” series is produced by chef Kentaro Takahashi-san, who runs the famous sushi restaurant upstairs. 10 seats. ラーメン / Ramen / Mazesoba CHOPS — Shibuya, Tokyo

Jiro inspired soup is pork bone based, seasoned with shoyu tare, chicken oil and pork back fat. Thick and wavy noodles are custom-made with Hokkaidō-grown wheat. Standard Jiro style toppings feature cabbage, bean sprouts, sliced pork chashu and garlic.

The Mazesoba CHOPS brand is operated by DELTA Inc., with the concept produced by the Shibuya Iekei shop “Samurai.” The flagship store was founded in Yoyogi in December of 2021. Shibuya is the 2nd branch, open daily from 11am-6am. 12 seats. Since May 19, 2022. Less
