蜆のラーメン / Shijimi Ramen / Shōnen Kyoto — Nishitenma, Osaka

Clear chintan soup contains Amakusa-Daio chicken, pork and shijimi clams. Medium-thin noodles are supplied by Menya Teigaku, paired with shio tare and chicken oil. Topped with pork chashu and green negi.

Shōnen Kyoto is a sake/wine-driven bar that relocated from Kagoshima to Nishitenma, Osaka. The bar is now located in a building that is also home to a famous sushi restaurant, an award-winning tempura restaurant, a members-only yakiniku restuarant and an udon shop that customers queue up at daily. The “Ken-chan Ramen” series is produced by chef Kentaro Takahashi-san, who runs the famous sushi restaurant upstairs. 10 seats.
