It was opened in 2022 by Tsubasa Matsuishi, who previously worked as a sous-chef at the renowned KUROMORI in Sendai, a destination for food lovers from all over Japan. He established this restaurant at the location of his two previous establishments. Parking is reservation-only, with one spot available in front of the restaurant or in the gravel lot next to the house that you see first when you go left from the restaurant. You need to secure a spot when making your reservation. Lunch is served on weekends and Mondays. ◆Impressions I visited after making a phone reservation (followed by a table check). The cozy interior offered a wonderful atmosphere with lush greenery visible from the back. I thought it felt reminiscent of KUROMORI, and it made sense when I learned that the chef was a disciple of KUROMORI and had previously worked at two establishments before this one. The service was attentive and very good. The tea called Shiki Haru was delicious, and I appreciated the multiple refills. As for the dishes, the concept seems to be enjoying the flavors of the ingredients, with overall gentle seasoning. The meal started with a sea urchin soup. Although I still found it challenging, it was the best sea urchin dish I’ve had so far. From there, I found myself questioning whether the dishes were Chinese or Japanese, but they were all delicious and remarkable. The appetizers included delightful tomatoes, horse mackerel with a hint of sansho pepper, and exquisite saury paired with fermented onions. The baby melon was fermented with lactic acid bacteria.The spring rolls with flounder and udo were exceptional, with the udo really shining through. The most impressive dish of the day was the steamed sea bream with fermented napa cabbage and fragrant chive flowers. It paired perfectly with Yamagata jasmine rice, leaving me in bliss. The fried sea bass was accompanied by junsai, which Matsuishi harvested from a place where he could pick as much as he wanted for two hours.The dry tantan noodles were made with Yamagata's barley noodles, boasting a strong chewiness and smooth texture. 仙台・高台の住宅街に静かに佇む中華料理店『松石』へ。
かつて名店『クロモリ』があった場所に、数年の時を経て再び灯った火。それをともしたのは、若き料理人・松石氏。修行時代からこの風景に魅せられていたという。間には一度イタリアンが挟まったが、縁とは面白いもので、この景色を取り戻すように、彼の料理はこの空間にしっくりと馴染んでいた。
中華の技法を基礎にしながら、素材は宮城とその隣、山形のものが中心。フカヒレやアワビに代表される中華食材の名産地でもあるこの土地で、和の清らかさと中華の力強さが見事に融合していく。“素材型の中華”とでも呼びたくなる、そんな一皿一皿が特徴だ。
まず登場するのは「茶碗蒸し」。帆立、つぶ貝、蕪、セリとともに、中華スープを用いた一椀だが、印象はどこか和のそれ。中には自家製の干し貝柱も忍ばせ、旨味にしっかりとした中華の芯を残す。滑らかで穏やか、ただし旨味は骨太。最初の一品から、松石料理の方向性が見える。
続く「前菜」は、紅しぐれ大根の下に、神経締めされたマコガレイが。4日間の熟成を経たその身に、熱々の油を回しかけ、香りと辛味を立たせる。アタックはしっかり、だが後半は旨味で包み込む構成。中華の火入れと和の設計、その両立がここにもある。
「春巻」は、七ヶ浜産の白魚をたっぷりと使い、まるで“白魚の餡”とでも言うような詰まり具合で仕上げたもの。一匹一匹を見せるのではなく、旨味をぎゅっと凝縮して閉じ込める構成だ。カリッとした皮の中から、春の香りとほのかな甘味がふわりと立ち上がる。春巻きのイメージをやさしく裏切る、豊かな季節感に満ちた一品。
「焼売」は蕗の薹と行者にんにくという山菜のダブル主役。前者には自家製の蕗味噌を重ね、噛んだ瞬間に香りがふわりと広がる。口内で春の山を歩いているかのような香味の連なり。焼売の体を借りた山の料理だ。
「スズキ」は神経締めで締められた一品を、うるいと共に。仕上げには自家製のXO醤をまとわせるが、塩梅は極めて穏やかで、素材の輪郭を損なわないよう設計されている。
「牡蠣」は、宮城・鳴瀬のブランド。火入れは煎り焼きで、豆鼓の発酵ニュアンスが香る。ミルキーな牡蠣の下にはキタアカリのじゃがいもが隠れ、エキスを全身に吸い込んでいる。牡蠣そのものだけでなく、周囲の食材までも活かしきる発想に唸る。
「純粋金華豚の叉焼」はアスパラガスとの組み合わせ。炭火でじっくり焼き上げた香ばしさに、ばっけ味噌(ふき味噌)のほろ苦さ。豚の脂と春野菜の香りが交差する、美しいバランスの一皿。
そして締めは二段構え。
「ワタリガニの炒飯」は内子までしっかりと使用し、カニの濃厚さと三つ葉の香りが軽やかに調和する。続く「庄内小麦の担々麺」はつぼみ菜を添え、優しい辛味と旨味で身体をじんわり温めてくれる。
甘味も抜かりなし。「とちおとめ」はシャーベットにして、杏仁のフロマージュブランが添えられる。もう1つが「よもぎ」のマーラーカオ。春らしい香りと食感が、食後の余韻を柔らかく包み込む。
