It was a bonus to find these knockouts on the menu, deep fried sesame balls stuffed with bird’s nest and apricot kernel milk and fried boneless frog leg stuffed with julienned shiitake, jinhua ham and the most tender part of Chinese kale, a beautiful Shunde dish named after its presentation like a jade hairpin.

Tofu mitarashi dango filled with walnut and topped with caviar and sea salt. Buddha’s hand, squid, clarified coconut milk infused with herbs and a dash of galangal oil. Lightly poached oyster with creamy caramelized eggplant, crown daisy and oyster milk. I thanked myself for keeping a sip of junmai ginjo for the iconic chawanmushi. Then there was probably the best creme brulee I’d ever had. Creamy shirako, grassy green pepper confit with a hint of sweet umami, buttery and citrusy hollandaise, and a caramelized brown butter top. Langoustine with corn purée, Comte 24 months and nasturtium flower, superb sauce made with vin jaune and sherry from Jura. Roasted rose duck( dry aged with burnt hay for 2 weeks) skin was glazed with honey then blow torched, served with duck jus, blackcurrant and variations of mushrooms dusted with cocoa powder. Apricot kernel panna cotta, starcruit, persimmon, tagetes lemmonii. Buckwheat ice cream, fig and olive oil. True elegance is about being remembered and this visit was back in last Dec. Voila.

In March, 3 immensely talented professionals took on fun challenges together to create collaboration magic. And it was indeed an evening full of deliciousness! The scallop crudo came with the most amazing sunchoke consommé and a touch of coffee oil, absolutely sensational. Then there was the oyster covered in green velvet. I was sure amused by this brilliant spin off from Logy’s poached oyster dish and its juice pairing on their winter menu. The clarified cocktails were refined and complex, with amazing mouthfeel and layers of flavors, like food in liquid form. Bravo @jeffdownss @ryogotahara_logy @yicheliao on your beautiful waltz👏👏👏

Stunning degustation. Every dish was meticulously crafted and every bite was a joy to savor. The light and refreshing scallop kombujime with local green jujube was almost too beautiful to eat. There were gherkins and capers( western tsukemono?) vanilla oil and a superb yoghurt sauce made with sakekasu and honey vinegar, finally shallots and finger lime... More
Stunning degustation. Every dish was meticulously crafted and every bite was a joy to savor. The light and refreshing scallop kombujime with local green jujube was almost too beautiful to eat. There were gherkins and capers( western tsukemono?) vanilla oil and a superb yoghurt sauce made with sakekasu and honey vinegar, finally shallots and finger lime added more pop. The rich and hearty roasted veal ribeye and fried raviolo stuffed with foie gras and porcini, fondant celeriac, parsnip purée and crown daisy, finished with foie gras and port jus, plus a drizzle of red wine jus reduction. The extraordinary desserts executed with so much thoughtfulness to highlight the beauty of seasonal strawberries. And impeccable chocolate fondant with vanilla ice cream and shaoxing wine glaze.
The incredible company of lovely new friends was of course the icing on the cake❤️
