A brilliant meal at 2* @logy.tw in Taipei at its new location! I had a superb meal at Logy 2 years ago so I definitely wanted to revisit the restaurant on this trip. Originally from Hokkaido, Chef @ryogotahara_logy had trained in Italy and worked at Tokyo’s Florilege as sous chef before launching Logy in 2018. The restaurant moved to its new location last year, and it is bigger and better with high ceiling and tables instead of counter seats. Using local seasonal ingredients, the menu celebrates the diversity of Asia while staying true to its Japanese and Taiwanese heritage. Flavors were complex and highly sophisticated - highlights included the crab & mango tart with Shaoxing wine, abalone with apricot kernel & gamtae (inspired by the classic pig’s stomach soup with pepper), lamb with mala spiced sauce made from 18 spices, and the signature crispy eel with chocolate & green Sichuan pepper. The meal was complemented with the excellent wine pairing by Asia’s Best Sommelier @lu__kevin_ms and the non-alcoholic pairing designed by Chef Ryogo himself. Eel tempura with burnt brown sugar lacquer, 100% dark chocolate, Comté, mushroom broth, white balsamic, and green Sichuan peppercorn oil.
Just hearing the description made me wonder how it could possibly work. But I got hooked at first bite! What surprised me wasn’t just that it worked, but how naturally the ingredients seemed to speak to each other. There’s a clear logic beneath the chaos. Umami runs through Comté and mushroom broth. Acidity from the white balsamic and dark chocolate cuts through the richness of the eel. Nutty notes echo between Comté and dark chocolate. Bitterness from burnt brown sugar and dark chocolate adds depth. And then there’s the green Sichuan peppercorn- floral, citrusy, gently numbing, a final genius touch.

One of the standout aspects of the evening was the exceptional wine pairing curated by Kevin Lu, Logy’s head sommelier. Lu’s expertise is unparalleled; in 2024, he became Taiwan’s first and only Master Sommelier, a title held by fewer than 280 individuals worldwide . His previous experience includes managing wine programs at esteemed establishments like Belon in Hong Kong . At Logy, Lu’s pairings elevated the dining experience, each selection thoughtfully chosen to complement and enhance the flavors of the dishes.  
While the culinary artistry at Logy is commendable, there were moments where the complexity of certain dishes felt overwhelming. A more restrained approach, allowing individual ingredients to shine, could further accentuate the restaurant’s strengths.

Award-winning somm @lu__kevin made great choices for every course. I especially liked the orange Lunar from (wild and crazy guy) @moviawines with the sweet-and-savory unagi, fried and then finished with mushroom broth and scallions. Ryogo’s cuisine shows a clear lineage to his mentor, @hiroyasu_kawate, veering principally in the embrace of bitter flavors at Logy.
One of the most captivating courses was also the most subtle: homemade tofu filled with a touch of cream, afloat in a broth of tomato water and whey, crowned with caviar and a pine-oil-scented pine nut. It was my first time trying Logy and I was very impressed with its complex and well-constructed dishes - highlights included the white shrimp with shaoxing wine jelly & mango, “hot & cold” chawanmushi, smoked mackerel risotto, caramelized eel tempura, and camomile ice cream with white asparagus soup. The meal was made all the more special with the excellent wine pairing by @lu__kevin who was just named Asia’s Best Sommelier by @theworlds50best!

Tofu mitarashi dango filled with walnut and topped with caviar and sea salt. Buddha’s hand, squid, clarified coconut milk infused with herbs and a dash of galangal oil. Lightly poached oyster with creamy caramelized eggplant, crown daisy and oyster milk. I thanked myself for keeping a sip of junmai ginjo for the iconic chawanmushi. Tofu mitarashi dango filled with walnut and topped with caviar and sea salt. Buddha’s hand, squid, clarified coconut milk infused with herbs and a dash of galangal oil. Lightly poached oyster with creamy caramelized eggplant, crown daisy and oyster milk. I thanked myself for keeping a sip of junmai ginjo for the iconic chawanmushi. Then there was probably the best creme brulee I’d ever had. Creamy shirako, grassy green pepper confit with a hint of sweet umami, buttery and citrusy hollandaise, and a caramelized brown butter top. Langoustine with corn purée, Comte 24 months and nasturtium flower, superb sauce made with vin jaune and sherry from Jura. Roasted rose duck( dry aged with burnt hay for 2 weeks) skin was glazed with honey then blow torched, served with duck jus, blackcurrant and variations of mushrooms dusted with cocoa powder. Apricot kernel panna cotta, starcruit, persimmon, tagetes lemmonii. Buckwheat ice cream, fig and olive oil. True elegance is about being remembered and this visit was back in last Dec. Voila.
