Chef Kuni’s ingenious dorayaki harmoniously combined elements of the east and the west, just like the hybrid plate it was served on, reflecting histories and cross breeding between 2 aesthetics. Beef tartare sandwiched between soft castella pancakes, served with tuna sauce, beef jus and nasturtium.
