The scallop crudo came with the most amazing sunchoke consommé and a touch of coffee oil, absolutely sensational. Then there was the oyster covered in green velvet. I was sure amused by this brilliant spin off from Logy’s poached oyster dish and its juice pairing on their winter menu.
