Back at Rizaki Aoyama one of my fav place in Tokyo for affordable sushi. The 15 000¥ Omakase course never disappoint and I especially love his squid nigiri as you can see on the picture it’s a little jewel. It’s wonderful!

Japan’s seafood shining bright ~

Wonderful Tsumamis line up at Sushi Takuma (@sushi_takuma ) in Osaka. Sashimi, uni, bonito with yam, steamed Tako and Oysters. Everything was delicious and fairly priced.

I miss the flavors of Japan already ~

Another recovered picture, another story.
January 2023, the end of my first trip to Japan. I just had a meal at Harutaka and Namba the days prior. For the first time I had experienced the highest level of sushi. I was stunned. This night was Inomata, I barely had the 50 000¥ to pay for the meal but I was excited. I headed to Saitama, getting lost on the way because it was far away from my place in Chuo-Ku. I finally arrived to Inomata on time, with a 4.44 rating on Tabelog I had very high expectations. I hoped the sushi would be as good as Namba or Harutaka. Inomata-san delivered! He served me some of the best sushi I ever had, I was especially stunned with the Zuke tuna. Usually some chefs just do some Zuke for Akami but Inomata-san also marinated ChuToro and Otoro! It was quite unique and impressive. I left very satisfied but I felt like the menu was expensive. 50 000¥ for 18 nigiris. Still when it comes to quality I can say even today that Inomata sits at the top of the mountain with the other greats.

When I returned to the hotel, I looked at all the photos with a hint of sadness. The trip was over. My first great sushi adventure in Tokyo was over. My head was full of questions : When would I come back to Japan? Would I be able to write my book about sushi?

This picture was taken in March 2023. So it’s been more than 2 years. Back then @shokunin_sushi_ was the headchef of @sushishunei

The first time I met him was at Shunei a year earlier in February 2022. I was stunned to see how much he achieved in a single year. His sushi was more than delicious than before and he had honed his craft with some of the best like Tadashi Yoshida.

When he worked at Shunei I would do my best to come visit as much as my budget allowed it. Seating at his counter in Spain and in France was a privilege and I’m very happy to see that now he’s performing exceptionally well in Thailand.

To me @shokunin_sushi_ is a very inspiring figure, he’s the proof that if you have a dream and you work hard enough for it, you can achieve it. He worked insane hours from America to Japan in order to be where he is today. Hats off Tiago!

I’m looking forward to visit @jikaseib in the future!

It was in March 2023. After my first trip to Japan I decided to do a sushi raid in London. At this time I was still writing my first book and I felt like I needed to do every great sushi in Europe. During this trip most places were disappointing Araki and Roji were not really good. Maru was fine, but nothing special. Maybe I was becoming too picky after traveling to Japan.

However my meal at @takumayfair reminded me that determined Shokunin can produce great things. I met @johnparkldn & @nozng and they did great. Both the tsumamis and nigiris I had on that day reminded me of the quality I found in Japan a few months ago. 2023 and London seem so far away now. All we can do is move forward but this is a great memory ❣️🍣
