【モーゼ】

東中野でパスタを語るなら、まず触れておくべき存在がある。駅前で長年営業を続ける『モーゼ（MOSES）』。1973年に赤坂で創業し、1977年から東中野に根を張ってきた老舗で、明太子や納豆、紫蘇、出汁といった和の要素をスパゲッティに落とし込み、この街の日常に定着させてきた一軒だ。

そのモーゼとは別の場所に構えられているのが『Spaghetti House MOSES』。位置づけとしては2号店にあたる存在で、メニュー構成も味の方向性も共通している。やっていることはシンプルで、同じスパゲッティを、同じように出している。

注文は、人気ナンバーワンの「明太子としめじと納豆しそ入り」。太めでもっちりとしたスパゲッティに、出汁を含んだとろみのあるスープ。明太子の塩味と旨味が前に出て、しめじが香りを支え、納豆の発酵由来のコクが重なっていく。咀嚼のたびに和のエッセンスが口の中に広がり、紫蘇が加わることで、最後だけがすっと切れる。

長い年月をかけて積み重ねられてきた時間と、二つの店舗という存在。その反復の中で、和風スパゲティはこの街の中で当たり前になっていったのだろう。東中野でパスタを語るなら、「MOSES」の存在は無視することはできない。ご馳走様でした。

In a city with so many great fine dining restaurants, @thechairmanrestauranthk remains a defiant sanctuary for the soul of Cantonese cuisine. My recent lunch there wasn’t just about elite cooking; it was about a deep, quiet respect for ingredients that often get overlooked.

The meal kicked off with a Pig’s Ear and Trotter Terrine that managed to be both rustic and incredibly refined, balanced by the sharp zing of ginger and vinegar. Then came the Crispy Taro Cake with Smoked Duck, a bite that perfectly captured what makes this place special: taking a familiar texture and making it feel brand new.

The philosophy here is simple but rare: they don’t hide behind expensive gimmicks. Instead, they obsess over the basics and on a labor-intensive extraction of umami. This was evident in the Beef Balls, perfume-heavy with the aged/sun-dried mandarin peel, and the Geoduck poached in a velvety rice broth, a dish that felt like a warm embrace.

The highlight was, predictably, the Steamed Flowery Crab. It’s served in a pool of aged Shaoxing wine and chicken oil so fragrant you could smell it across the room. Watching the flat rice noodles soak up every drop of that golden sauce is a ritual in itself. It’s Cantonese cooking at its most honest. Focused on the natural sweetness of the seafood and the warmth of the wine.

By the end of the meal, it is easy to realize that The Chairman isn’t trying to reinvent the wheel. They are simply perfecting it. It’s a restaurant that trusts its ingredients and its heritage enough to let them speak for themselves, proving that the most memorable meals aren’t usually the loudest.

Originally from New York, 𝗢𝗫𝗢𝗠𝗢𝗖𝗢’s menu is inspired by the diverse regions of Mexico🗽Yesterday, they relocated from @eat_play_works in Hiroo to their new location at @roppongihillsofficial🗼

There are a few dog-friendly seats by the entrance, so we naturally visited with @qoothepomchi🐶

Highlights included the “𝗠𝗮𝗶𝘁𝗮𝗸𝗲 𝗧𝗮𝗰𝗼𝘀” with herbs ricotta, Morita-ancho salad and black trumpet chip, along with the “𝗦𝗼𝘆𝗮 𝗠𝗮𝗿𝗶𝗻𝗮𝘁𝗲𝗱 𝗧𝘂𝗻𝗮 𝗧𝗼𝘀𝘁𝗮𝗱𝗮” with avocado, salsa mocha and radish🌽

昨日、広尾のEPWから六本木ヒルズへ移転リニューアルしたモダンメキシコ料理店「𝗢𝗫𝗢𝗠𝗢𝗖𝗢（オショモコ）」🇲🇽 ニューヨーク・ブルックリンの本店は、オープンわずか5ヶ月でミシュラン1つ星を獲得した大人気店です🌟

エントランス近くの席は鞄に入っているかマナーマットを敷けば犬同席OKなので、@qoothepomchi と伺いました🐾

Lan Jia Gua Bao - Taipei (Taiwan)

Before Taipei, gua bao was always a curiosity for me. I’d eaten a few from a surprisingly good Taiwanese delivery in São Paulo, and elsewhere on menus where they sat beside things the kitchen probably preferred you order. Lan Jia, in the alleys behind National Taiwan University, was the first place I ate one in a kitchen that does nothing else.

I cycled there through the NTU campus, tree-lined avenues spilling into Gongguan where the line begins. The Lan family has been running the place over thirty years: same bao, same braise, every day. Most people order the 綜合 (zōnghé), fatty and lean pork together.

Gua bao’s lineage runs to Fujian, but the Taiwanese version took its modern shape on this island, and Gongguan is treated as its unofficial home. The Lan family is one of the names credited with codifying it.

The bao arrived warm and pillowy. Inside: a thick slab of soy-braised pork belly with a clean line between fat and lean, a heap of suāncài (pickled mustard greens) cutting the richness, fresh cilantro, and a generous dust of crushed peanut and sugar that melts into the fat. The peanut sugar isn’t a garnish, it’s the closing chord.

Mine took minutes to eat, standing on the sidewalk. By the second bite the bun was gone, and the line behind me had moved one person forward, a rhythm the Lan family has been running for thirty years.

The 𝗻𝗲𝘄 𝘀𝗽𝗿𝗶𝗻𝗴 / 𝘀𝘂𝗺𝗺𝗲𝗿 𝗺𝗲𝗻𝘂 at @billsjapan has arrived, and it’s all about light, vibrant flavours with a subtle Japanese touch🌿

The standout was the 𝗣𝗿𝗮𝘄𝗻 & 𝗖𝗿𝗶𝘀𝗽𝘆 𝗥𝗶𝗰𝗲 𝗦𝗮𝗹𝗮𝗱 - packed with herbs, crunchy textures, and lifted by a punchy 𝘺𝘶𝘻𝘶-𝘬𝘰𝘴𝘩𝘰 dressing🍋‍🟩

We also enjoyed the 𝗦𝗲𝘀𝗮𝗺𝗲 & 𝗕𝘂𝗰𝗸𝘄𝗵𝗲𝗮𝘁 𝗙𝗹𝗮𝘁𝗯𝗿𝗲𝗮𝗱, layered with chive feta and a fragrant chilli oil, alongside the delicate 𝗖𝗿𝘂𝗱𝗼 with fennel and bright citrus notes🫓

And to finish, the 𝗪𝗮𝗿𝗺 𝗞𝗶𝗻𝗮𝗸𝗼 𝗠𝗮𝗱𝗲𝗹𝗲𝗶𝗻𝗲𝘀 - served fresh out the oven with salted passionfruit & lime curd, soft, nutty, and perfectly balanced🔥

At the 𝗢𝗱𝗮𝗶𝗯𝗮 𝗯𝗿𝗮𝗻𝗰𝗵, dogs are welcome at select indoor seats near the terrace, as long as they stay in the dog carts provided🐶

先週から全国の「𝗯𝗶𝗹𝗹𝘀（ビルズ）」で春夏メニューがスタート🌷 軽やかで季節感のある品々に、日本らしいアクセントが加わったラインナップです🫶🏼

中でもお気に入りは「シュリンプ&クリスピーライスサラダ」 🌾 フレッシュハーブの香りとサクサク食感、柚子胡椒ドレッシングの爽やかな辛味が絶妙でした✨

「セサミ&バックウィートフラットブレッド」はチャイブフェタとスパイスオイルの香りが広がる一皿、「鮮魚のクルード」はフェンネルと柑橘の酸味でさっぱり🐟

デザートには焼きたての「きな粉マドレーヌ」❤️‍🔥 温かくてほろっとした食感に、パッションフルーツとライムカードの甘酸っぱさが重なって最高でした🌺

お台場店では、テラス付近の一部席にてカート利用であれば店内でもワンちゃん同伴OKなのも嬉しいポイントです🐕

Singapore’s iconic 𝗖𝗵𝗮𝘁𝘁𝗲𝗿𝗯𝗼𝘅 𝗖𝗮𝗳𝗲 has opened its Japan flagship earlier this year in Marunouchi, bringing over 50 years of heritage rooted in elevated street food🎊

The highlight was, without question, the 𝗠𝗮𝗻𝗱𝗮𝗿𝗶𝗻 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗥𝗶𝗰𝗲 - incredibly tender, juicy chicken paired with deeply fragrant rice and a trio of house-made sauces that tie everything together perfectly🍚

We also enjoyed the 𝗚𝗿𝗶𝗹𝗹𝗲𝗱 𝗦𝗮𝘁𝗮𝘆, smoky and caramelised, served with a rich, sweet and savoury peanut sauce🔥

シンガポール発の名店「𝗖𝗵𝗮𝘁𝘁𝗲𝗿𝗯𝗼𝘅 𝗖𝗮𝗳𝗲（チャターボックス・カフェ） が今年1月、丸の内に日本初上陸🥳 屋台料理のルーツを大切にしながら、洗練された一皿へと昇華したラインナップが魅力です🏮

中でも印象的だったのはもちろん名物の「マンダリンチキンライス」💯 しっとりジューシーな鶏肉に、旨みたっぷりのジャスミンライス、そして自家製チリソース、ジンジャーピューレ、ダークソイソースの3種のソースが絶妙に調和❤️‍🔥 長年守られてきた味わいに納得の一皿でした👏

辛いだけじゃなく刺してくる舌の上が大炎上
白米はもはや消防隊オカワリ自由で本当に安堵
無心、汗、鼻水、無言なのにレンゲは止まらない
これだけ辛いのに更に欲しgirl発動する中毒性
店内では中華鍋を振るう音と香りが食欲を刺激
腹を満たすだけじゃなく脳まで支配してくるお店
さりげない気遣いが心地いい男女が切り盛り
