Amaebi is "nanban" ebi in Niigata. Honma-san's sushi is as straightforward as it gets. Decent vinegar strength (6.5/10) with a tilt towards komezu. In winter, kue was the opening piece, in spring a super crunchy piece of ara. Both times followed by sawara with the thinnest layer of wara smoke. Very classic.
In springtime, a lot of high end sushiya in Tokyo may be serving iwashi from the Hokuriku region. A good example of why going straight to the source can be even better: this local iwashi was probably the best and most beautiful I've tasted - only matched by the equally excellent iwashi I tasted a few days before (and posted on about a week ago).
A note on technique. Honma-san uses one of the 4 classic ways to form nigiri, one that has a lot more vertical motion and supposedly results in less densely-packed shari. Can you name it?
