A special gathering of chefs from Seoul, Hong Kong, Tokyo, and Kanazawa at the @restaurant_allen x @ando.hkg x #cronytokyo x @respiracion_japan collaboration for Asia’s 50 Best! It was a night of familiarity and new experiences - having tried the food from all of the restaurants except for Allen. What impressed me the most was how well the entire menu came together despite each of the chef’s unique style. Thank you to @allen_hyunmin_suh @agux1988 @michi_crony @tatsuroume @keisuke_y.a.g.i for the wonderful evening!

An exciting collaboration between @bornandbredkorea and @leela.hkg where Korean Hanwoo beef meets Indian spices! The menu showcased the unique pairing of Indian and Korean flavors with enticing dishes such as the Fish Skin Chaat, Yukhoe with sweet green chili, Crab Curry with bone in ribeye, and more. Some of the dishes from @chef_manav_tuli were made for the first time - making the meal all the more special. Initially, I was worried that the combination of Indian spices with Hanwoo beef would be too heavy, but the two chefs managed to balance the flavors and portion perfectly. The sweet ending with the masala chai bingsu was just cherry on top. Thank you @chef_manav_tuli @kyunghwanmin for the delightful afternoon!

A hidden gem in Nishikoyama where you can choose your menu visually and interactively. At @caillou_nishikoyama, guests are invited to the open kitchen where Chef @koichi__adachi showcases the ingredients of the day while explaining how he will prepare each of the dishes. It’s a great way to see the dishes visually while discussing with the chef how best to construct your menu. Between the two of us, we chose 4 appetizers and 3 mains to share which was more than enough food. The flavors were clean and balanced while the execution was excellent. The biggest surprise of the night was the poele horse meat which was super tender and flavorful - possibly the best horse meat I’ve ever had.

The one restaurant that I try to visit every time in Shanghai is Fu 1015 #福1015 for its classic yet refined Shanghainese cuisine! There were two dishes that we specifically requested to try this time - the #醃篤鮮 (a classic Shanghainese soup made with winter bamboo shoots and a duo of cured and fresh pork) and #鰣魚 (a shad fish that is steamed with its scales intact to preserve the prized layer of fat under the scales) - and both were executed superbly. Classics such as the smoked fish with sweet soy sauce, hairy crab roe on toasts, #馬蘭頭 and steamed rice with abalone, pork & black truffle were delightful as always. A huge thank you to Rianna and staff for the wonderful night with fantastic service and food!

- a showcase of local terroir using Wagyu grown in China and homemade oyster sauce. The oyster sauce was particularly impressive as it was made in the most traditional way with an abundance of oysters.

- ending the savory part of the meal was the Wuchang Rice simmered and mixed table side in a clay pot. A tribute to Eight Treasures Rice, the peppery sauce reminded me more of the flavors of stir-fried shredded eel (鱔糊) instead.

Before desserts, we were presented with a fruit platter to choose the flavor of our palate cleanser and ended up with all 4! The tomato with olive oil was my favorite.

- the main dessert featured Chinese Honey through two different kinds of honey: sour honey and dark honey from black bees. Accompanying the beautiful dessert was a beehive made from real bee wax with the sound of buzzing bees.

回憶 𝗠𝗲𝗺𝗼𝗿𝘆
- a whimsical ending where we were presented with a miniature candy shop for our petit fours. Upon inserting a coin, the box started playing music while emitting the smell of a typical candy shop, invoking the nostalgia of our collective childhood.

Complementing the food was a fantastic selection of teas, beer, and wines from China and beyond. Some favorites included the cold brew tea which became sweet after being whisked and the mead (honey wine) which was an excellent pairing with the honey dessert.

A stay at @fshangzhou is not complete without a visit to its acclaimed restaurant Jin Sha #金沙厅! Helmed by Executive Chef Wang Yong, the restaurant offers traditional Zhejiang cuisine with seasonal local ingredients and a modern flair. As it was not my first time here, the chef organized the latest seasonal dishes for us to try - highlights included the soft-boiled egg with mashed broad bean, chicken soup with fish meat cake, wok-fried king with sesame ball, and Chinese toon ice cream with soy milk.

Literally meaning “mountain house with osmanthus”, Gui Yu Shan Fang #桂语山房 is a beautiful restaurant nestled in a valley full of osmanthus trees. It’s best to visit in autumn when the trees are in full bloom - just imagine the smell! Favorites of the meal included the beef in spicy spring water, yellow croaker spring roll, stinky tofu with tripe, and crab with rice cake.
