The next stop on our best of Spain tour was to restaurant Sacha, a cherished bistro nestled in Madrid’s Chamartín district which has garnered acclaim for its authentic Spanish cuisine and enduring charm. Established in 1972 by Pitila Mosquera and Carlos Hormaechea, the restaurant is now helmed by their son, Sacha Hormaechea, who continues the legacy with a blend of tradition and subtle innovation. He is the most incredible host as well, visiting each table throughout the night and ensuring that they are having a great time. Romantic couples, chefs (Ferran Adria was in on my last visit in November), rowdy groups like us, he knows exactly what is required to ensure everyone is more than happy. A special shout out to my friend behind the scenes Lucho for taking such good care of us as well.

Kotetsu opened in 2016 with just an eight-seat counter. The master's name is Tetsuya Ooshima, and he trained at the iekei-style shop Samurai in Shibuya, where he was the shop manager. The soup here is not iekei but a light shoyu, using a double soup — pork bones, chicken and vegetables, combined with a gyokai. The thin straight noodles come from Tamura-Seimen based in Hachiōji. BUT—this baked turkey sandwich at @picaso_chicken? 🔥 A superb Peruvian chicken spot in Duluth’s City Farmers Market. Easily among the top 5 turkey sandwiches in the metro. Been here several times—and trust me, the rotisserie chicken is elite! 🍗💯

I specialize in finding the real hidden gems, so I don’t throw that term around lightly. Possibly the best rotisserie chicken for miles. The pictured sanguche de pavo? Straight Atlanta Grubber Best Sandwich material! 🏆
